Freezing Bread

I know Ann, Linda, Annie and others regularly freeze bread but I have no luck doing it. It always seems the bread looses it's texture and while it is OK toasted I don't like it for fresh bread sandwiches.

As mentioned on another thread, I am doing tea sandwiches for a very dear cousin. I don't have access to a real bakery and the in store bakeries don't offer a Pullman style bread for teas sandwiches. After the "enabling" comments here I ordered a Pullman loaf pan and am making my own bread.

I need to make 8 loaves with one pan so clearly it will be a multi day process and I will have to freeze the bread.

All that to say......how the he!! do you folk freeze bread in such a way as to preserve the texture for fresh, not toasted , sandwiches?
