Making bread crumbs

I seem to be using a lot more bread crumbs than ever. Coincidentally, I went out of town and neglected a perfectly good batard of lovely wheat bread instead of thinking to freeze it. It's wonderfully stale and I thought I might grate it for bread crumbs, but being a whole loaf, it's big.

Some advice please? Would you use a Cuisinart? If so, would the grating disk be best?

Also, would you freeze bread crumbs? I've never tried to store them. Do they go moldy if they're good and stale?
