Please tell me about Sous Vide cooking.

I'm kind of curious if there are many advantages with it. Does it make meat more tender? Do you need to put grill marks on the meat by throwing it on the grill for a bit to make it prettier? Do I seal the meat in a bag sealer machine with or without a marinade in with the meat? I have a bag sealer already.

I have seen both the bigger machine about the size of a big crock pot and also the thing that is about the size of an aquarium heater or immersion blender. Is one better than the other if you have the space for the bigger one or should you just try the smaller one to see if you like this method of cooking? I have heard restaurants use this method to cook their steaks. True?

I have been so disappointed lately with the quality of the meat in the grocery store. Rib eye is not supposed to be tough. Even using the tumbler with marinade it is still tough.
