Comments (30)gina_w, I made your poached salmon with chimichurri for supper tonight -- right down to the garnish. My husband and I both LOVED it! It is a definite contender for the party. Do you think that it would be good at room temperature? I don't want to be cooking during the appetizers or the soup course, but I am afraid if I keep it warm in the oven it will dry out, and even a reheat in the microwave might overcook it. Here is how I did the chimichurri and poached the fish (I'm sure you know how to do both, but just in case some other reader wants to know): I took a big handful of flat leaf parsley, 4 cloves garlic, and a bit of onion and minced them in the food processor. Then I added about 1/3 c of arbequetta olive oil, a little red wine vinegar, a little lemon juice, about 1/2 t of dried oregano, and S&P. That's it -- and it was really terrific. I poached the salmon by putting it in a deepish pan with water to cover, added some mirin, some peppercorns, and a bay leaf, as you suggested. I brought it to a boil, and then immediately took it off the heat, covered the pan, and let it sit about 10 minutes. eandhl, here is my recipe for stir-fried tofu. It was my first stir-fry. Many years ago, when I was about 22, my aunt gave me a wok. It just sat there until one day in the newspaper's food section, in the "kids in the kitchen" column, I found this recipe for stir-fried tofu and vegetables (I've rewritten it to leave out all the super-basic instructions like "peel the onion and put it on a plate"). I figured if kids could do it, I could, too! Now I love to cook all kinds of Chinese dishes, but this is the one that got me started. My kids always loved it. I make all kinds of modifications now, depending on what vegetables I have on hand, and I use sherry, dark soy, hot oil, etc. This is the basic; you modify it the way you want (use more or different vegetables; include water chestnuts and bamboo shoots; add or substitute chicken or beef for the tofu; etc.). Stir-fried Tofu and vegetables ¼ pound mushrooms 1 large carrot 1 small onion 1 small green pepper 1 - 2 pkg tofu (firm works best) 1 clove garlic 2 T water (I like sherry or mirin instead) 1 t cornstarch 2 T oil (I like to use peanut) 3 T soy sauce 2 t honey Prepare vegetables. Comments (15)Jaybird, maybe I can explain my reasoning. For me, the emotional INCOME of pleasure from dealing with activities or objects must equal or be MORE than the emotional OUTGO and pleasure from those activities or objects. No one is saying there is anything wrong with having tons of decorations or stuff, if it gives you pleasure. Most of us here are dealing with the concept that the disorganization has reached a point it is NOT pleasureable. The work associated with cleaning, packing, storing, keeping and putting the stuff back out again is not pleasurable. I'm middle aged, but my youngest child is only 5. I only have so much energy to go around and I have to make sure I'm not running on empty. I'm trying to be more thoughtful in what I bring into our environment to make sure I keep that balance between the work involved and the pleasure I receive. I would bet my next paycheck that your friends and family like to come to your house because YOU are a warm and inviting person. Therefore, your home is warm and inviting, especially over the holidays. There are many things which would give me pleasure but I am no longer willing to do the work associated with the pleasure. I have very few clothes, even though I like and can afford trendy stuff. Keeping them clean and pressed is too much work for me now. I love pots and pots of flowers around my patio, but again, the work level has become something which is unbalanced. Now, all of my ratty, vintage quilts? That's a different story! If a magic genie could come and decorate the house for the holidays with a poof! (and take it down) I would really like a super decorated home. But, for me, being realistic means after the first time or two of lugging and packing holiday dishes, they will just sit in the box. It means I'm the one who will spend days putting the stuff up and days taking it down and packing it away. By coming up with an easy care substitute like a couple of pretty tablecloths, I can achieve my goal of a festive table with much less work. I am also trying to get away from some of the messages from society, that if we don't go all out, then our family won't have a nice holiday. We don't even put up the tree until the 15th of December because I feel that it keeps the build-up or anticipation level too high for my kids. The one thing I have really appreciated since finding this board, is the support and encouragement for whatever someone is trying to achieve. We all have really different lives and challenges. It's not important that I understand Marie's stuggle with her paper clutter. I don't have to make sense of Julie's desire to have her wardrobe a certain way. I can encourage and try to help them reach their goal. For me personally, it's been a quest to stop looking at the short-term pleasure, but see a bigger picture of what comes and goes in my life. Comments (21)I'm a big fan of meatballs so that'd be a first choice for me. A good ham, even a turkey would be simple as would be the pulled pork. A good hearty chicken salad (a good one with nuts, grapes, etc) would be on my plate too. A spread of meats and cheeses for a build your own sandwich would be good too with good quality buns, breads or the like. Even a mini salad bar would be nice and could be used for topping a sandwich if they should so choose. Or go one better for a taco bar. Is this going to be a standing, walkaround affair or sit down? Soup and chili are not good options for stand and mingle but it's a good time of year for it. A lighter scalloped potatoes and ham would work well too. Comments (23)OK, I'll weigh in here, I've had Christmas Eve dinner for 40 for about 25 years in a row now, LOL. I agree with Chase, you'll need more lasagna. And, unless your family is much different than mine, you won't need two green salads, I always have salad left over no matter what kind I make, plus it's messy to try to eat leafy greens while standing. I'd go with the caesar, a fruit salad, cut out the pasta salad and have more lasagna. It's easier to make a lot of one thing, instead of a bunch of smaller things. The cookies can be made ahead and frozen, so can most cakes, just don't frost them. Breads can also be made and frozen, I've even frozen bread dough for up to 3 months and then thawed it and baked it, ditto cookie dough. The kids will go for the mac and cheese, the lasagna and those "pigs in a blanket" or chicken fingers type of dish. You could do an assortment of chicken wings or strips if you want to add chicken. The best advice I can give you is to make everything ahead that you can, even lasagna can be made ahead and frozen. Good luck, relax and have fun.
