Remove eat-in kitchen bump-out?

Just moved in. We are having a hard time coming up with a layout to work around the current "bump out" that holds the eat-in kitchen area. The kitchen is currently a small galley and we can't do much to change that, although we plan on removing an interior wall to open it up to the den. Our thought is to tear this bump-out off the house and instead have a straight exterior wall, so we can extend cabinets, have more room for appliances, put in a functional window, etc. This would add a solid 7 feet of length to the kitchen. We'd be able to have a peninsula or island for "eat in" seating after removing the opposite interior wall. We can't figure out any other way to expand the kitchen with this bumped-out area still in place. The current windows in the bump-out go down lower than counter height. They are pretty, but in the way.

Any suggestions? Is it crazy to remove part of the house? It only bumps out a couple feet (see pics) and is pretty useless space for us. We'd much rather be able to expand the kitchen into this area. Cost-wise it seems ridiculous to remove this small part of the house, but in the end it would create a much larger kitchen footprint, which I think would help a lot with value. The kitchen is currently much too small for the size of house.
