Lars - I tweaked your roasted hot pepper sauce

Well tweaked in the sense I used different peppers. I roasted some sweet red peppers, sweet yellow paprika peppers, spicy cherry peppers, garlic, onion and a half dozen Fish hot peppers. I was thinking it was going to be milder than a habanero/jalepeno sauce but it is wicked hot. I ended up with four cups of purée - and added 4 tablespoons of salt and a cup of vinegar. Then I committed a small heresy by adding some roasted tomato purée. Still spicy. Nose is running and fingers tingling....
