Comments (7)I'm dealing with lots of butternut squash now too! What I do is to cut the squash in half, take out the stringy fibers and seeds, then roast/bake the squash cut side down in a 350 oven for 45 minutes to an hour, until it is tender. Let cool a bit, then scrape out the cooked squash flesh with a large spoon. Use the squash right away or freeze for future use. For your recipe: saute the onion and garlic in the butter, add in the broth and enough squash to make the soup the consistency that you like, add in the herbs, simmer for 20-30 minutes. Blend smooth (an immersion blender does this a treat right in the soup pot!), add back to pot, and add cream and sugar (I use brown sugar), season with s&p and heat well before serving. Comments (7)It's interesting for sure. Being absent minded and and clumsy don't mix well with cooking, but I like food too much to stop! I've never tried cooking mise in place (or cleaning as I go... Colonial Brown Bread 4 cups buttermilk 4 cups whole wheat flour 1 1/3 cups all-purpose flour 1 cup packed brown sugar 4 teaspoons baking soda 1 teaspoon salt 1. Preheat the oven to 350F (175C). Grease 9x5 inch (23x13 cm) loaf pan. 2. In a large bowl, stir together the whole wheat flour, all-purpose flour, brown sugar, baking soda and salt. Pour in buttermilk and stir until all of the dry mixture has been absorbed. Pour the batter into the loaf pan. 3. Bake for 1 hour in the oven, or until a knife inserted into the crown of the loaf comes out clean. 4. Serve warm. Store leftover wrapped in palstic warp in the refrigerator.
