I bought a spring, which I am currently trying to root. would love to try cooking with it. suggestions?

Thanks for suggesting the CF Apple Recipes thread. That sent me on a search through lots of other apple threads as well! There's enough there to inspire baking and cooking for a long time. Just as a reminder, though, the USDA does not recommend baking in paper bags. Oven roasting bags are a safer choice for those recipes. "Grocery bags are not intended or formulated for cooking foods. Levels of components such as metal fragments, glue and chemicals may be present at higher-than-acceptable limits and can migrate into the food. These bags may not necessarily be sanitary, particularly since they may be stored under a variety of conditions." It kind of falls into the same category as using trash bags or other non-food-safe bags for marinating or pickling. Glenda, I'd be pouring that over ice cream! Well, maybe anyhow. All the recipes sound great. This is the best chili I've ever made or eaten. Al Roker's recipe, from People magazine. 1 T olive oil 2 lbs. chuck steak, cubed 1 lb. crumbled hot Italian sausage (I used mild) 2 large onions, diced 12 cloves garlic, diced 1 T cumin 1 T paprika 1 T chili powder 1 28-oz. can crushed tomatoes 1/2 c. water 1 15 oz. can pinto beans 1 15 oz. can Northern beans 1 15 oz. can dark kidney beans Heat oil in large Dutch oven over medium-high heat. Brown steak and sausage for 8 minutes. Transfer to a bowl. Reserve 2 T of fat from meat, discard the rest. Saute the onions and garlic in the reserved fat until translucent, 8 minutes. Add cumin, paprika, and chili powder and cook for 1 minute. Add tomatoes, water, sausage/beef, stir and simmer for 90 minutes. Rinse and drain beans, add to chili. Simmer for another 30 minutes. Dish into bowls, garnish with cheese, green onions, sour cream or whatever you like.

This recipe is from "The Blue Willow Inn Cookbook" by Jane and Michael Stern. The inn is located in a tiny, sleepy town in Georgia named Social Circle. The restaurant draws people from all over and they all go away impressed with "real Southern food". There is a buffet daily and different each day, but they always have fried chicken (pan fried, not deep-fried) and real mashed potatoes. Harry has eaten there when he and a neighbor, Joe, went up to his brother's to put siding on their house. Joe's the pickiest eater in the world, and he raved about it. Here's one of their desserts: Ambrosia Coconut 2 c. mandarin oranges, drained 2 c. crushed pineapple, drained 2 c. sour cream 2 c. shredded coconut 2 c. mini marshmallows. Combine all the ingredients and chill. Makes 10-12 servings. How easy is that? I will add marachino cherries, because Harry's mother always did.

Based off this recipe and modified for maximum efficiency: http://www.seriouseats.com/recipes/2012/06/miso-glazed-salmon-in-the-toaster-oven-recipe.html Miso salmon take a 1/4 or 1/3 cup measure and put one scoop of sugar in a gallon ziplock bag. Use the same measure to measure miso, then an equal amount of white wine and add to the bag (order is important to avoid dirtying more than one cup measure). Add a good slug of olive oil and a good slug of soy sauce. Seal the bag and mush it around until the miso and the sugar dissolve. Add salmon to bag. I use the frozen wild filets from Costco, no need to thaw or remove the skin. Marinate in fridge until the filets are thawed (I do this in the am or night before, either works. If not using frozen filets probably only needs to marinate 30 min or so) Line a cookie sheet with aluminum foil, let the excess marinade drip off and put salmon under the broiler til done (about 4-5 minutes). Serve with rice and steamed broccoli or asparagus.

It is almost never available where I live out in the boonies, and whenever I have seen it, in the bigger cities, I couldn't afford it because I usually don't have time to cook with it and it would go to waste in my fridge like so many other good foods (cilantro, I'm talking to you!) But whenever I go out to eat at a Thai or Vietnamese restaurant, I always order lemongrass soup. Love it!

I used to have it in my yard, and it grew well in Venice, but I have not tried growing it here in Westchester (L.A.), although I probably should. It is easily available in markets, and so I can always buy it when I need it, but I also have it in a tube from Gourmet Gardens, which makes it easier to use, since it is tough, and I generally remove it before serving, especially if I use it in soups. I make Tom Yum soup frequently, as I have a Kaffir lime tree, and I keep galangal root in the freezer, although I have pieces of dried galangal as well for that recipe.

Lemon grass is good in a cold Thai beef salad, but I only get this in restaurants, as I do not book beef at home. I do use it when I make my own Thai curry paste, but then you can buy Thai curry paste easily enough now. My favorite Thai soup is made with shrimp and mushrooms, but I cannot find where I saved the recipe. I know I posted it here at one time. It is similar to this.

Most of the time when I use it, I just add it to a Pad Thai recipe, or a Thai or Japanese soup.

I'm a real Pho fan--it is easy to make and so good and flavorful. There are a lot of good recipes online. I like chicken Pho.
