can I harvest scion wood now (in fall)?

I have a lovely unusual cherry tree that just sustained major mechanical damage. The trunk has largely snapped. The bark isn't entirely compromised - it's not girdled. I matched up the cambium and taped the trunk closed again. For the moment it looks like nothing happened.

It's possible the tree will survive over the winter and heal. But I'd planned to use scions from this tree for grafting. Now I'm worried the tree won't make it and all the scions above the break will die. It's my first time doing scion grafting so I'm not sure.

Can I harvest the scions from above the break now? It isn't dormant, it's in full leaf. Maybe wait until leaf fall in a few weeks to harvest? cut back the trunk for winter? What would you do to preserve scions (and ideally the original tree, even if it requires extensive pruning and regrowth) for use next spring?
