We have Kohler 2210 sinks in our new bathroom and they seem fine. I don't know much about sinks, so I don't know the pros and cons really. The only issue has been (as I mentioned in a previous thread), we got two sinks and they were two different generations of the same thing, so the logos didn't match. If you're only getting one, obviously that's not an issue.

With kitchen counters that thick, I believe they face the counter with a layer of ply to support the stone. I wouldn't think that the sink would have problems with the thickness, the weight of the stone and the sink might make the slab crack if not supported across the vanity span. You could post this question over on the kitchen forum too.

Ikea vanity looks really nice. Thanks for sharing. We looked at vanities from Wayfair, AllModern, Ikea, etc., but opted to work with a local woodworker. It felt good to support a neighborhood artisan. When we come up for air we'll have him craft built-ins and purchased add'l Walnut with that in mind. At this point the Brio valves are roughed in for the shower and wall mount lav faucet so there's no turning back. To clarify, my question is when pairing an undermount sink with a wall mounted faucet and 24x20 countertop for use in a master bath - what's the most functional shape or is there no discernible difference?

I have the Kathryn or a Kohler sink that is almost identical to it. When I was bathroom sink shopping I wanted that style - undermount squarish look but there were some slight differences in sizes and so I am not certain which of the very similar Kohler sinks I wound up with - in the end I would have been fine with any of them. 🤷🏼‍♀️ I don't find it more difficult to clean or have hairs or toothpaste or other gunk adhering to the sides more than the standard rounded bowl I had prior to my remodel. I don't know where some of this advice comes from - my kitchen sink isn't oval shaped and certainly gets more crap in it in one day than a bathroom sink and both are equally easy to maintain without crap adhering to the sides. In terms of looks I think the sink is very neutral looking and can go either way depending on the other design elements.
