Plum ketchup

I was gifted some plums and I was intrigued with the idea of plum ketchup. I already have enough plum jam and plum sauce. I am considering this recipe. If possible, I would like to can it. When comparing it to plum sauce in my BBB, it looks like the proportion of vinegar to other ingredients is pretty good. Is this a safe way to evaluate it or should I just make the recipe and keep it in the fridge. Thank you for any advice.
