Ceviche. How Long In Lime Juice?

I'm making ceviche tonight. Halibut, mahi mahi, scallops. Will slice to about 1/8". How long would you marinate the slices in lime juice?

The recipe says to arrange the slices of fish on the platter, pour lime juice over, and serve. Does that seem a tad brief?

My fish is good quality but not sashimi grade.

(In the past I've cut fish into 1/2" cubes and marinated in lime juice for about an hour.)

Slices vs cubes. Recipe reads more like sashimi, I would prepare as directed.

I usually let it "cook" for an hour or so...less time might be ok with the fish, but I'd want the scallops more "done". (but 1/8" is pretty thin, so maybe it would be ok).

Well, that's because there are no Cocktails in that bowl, mrtexas :-) You're looking at Bearrs limes, Moro oranges and Dekopon mandarins. Yes, the Dekopons do resemble a Minneola a bit due to the neck. The Dekopon is a cross between a Kiyomi tangor (which is a cross of orange and satsuma mandarin) and a ponkan (hence the neck). They are not available for us in tree-form, yet, due to the very strict patent regulations. They are being grown by just a handful of growers in the Central Valley in California, and are being marketed as Sumo mandarins due to the extremely large size (as large or larger than a Minneola.) We are all anxiously awaiting budwood from UCR CCPP to be able to graft and grow, or for growers to do so, and provide trees for those who would like a backyard Dekopon. But, that's going to be a few years out, still. Definitely NOT a Minneola :-) I don't care for Minneolas as they're a wee bit too tart for my liking. Which is odd, because I love grapefruit and pommelo hybrids due to their sweeter taste. But for me, the Minneola just tastes like a tart orange, and not a sweet grapefruit :-) The Cocktails, which are most definitely Cocktails, are LONG gone, as they are my most favorite citrus in my yard. I squeeze two every morning, so I blew through them on my young tree in short time. Going to the Farmer's Market tomorrow to try to find some. Boo. But, I am now enjoying the few Melogolds I have. The Oro Blancos are also gone, too. But, everything is getting ready to bloom, so hoping for bigger crops this year! Patty S.

Summerfan, SWMBO is a goddess-like leader of a fictional primitive tribe in the 19th century novel She. It stands for She Who Must Be Obeyed, which was more recently popularized by the fictional character Rumpole of the Bailey, who called his formidable wife that (pronounced "Swimbo"), behind her back. John, similarly, refers to his wife that way, though, from what he says, she sounds rather nice. :) Melaska, thanks for the great link. I love reading odd stuff like that! And that being the case, maybe the best compromise is the crank style one after all. There's repetitive motion, but not really elbow grease. Lascatx, that's the kind of juice press I bought for pressing the excess water out of spinach for strata!

In your recipe you are looking for a citrusy flavour, you do not want an acid which is what vinegar is. You can substitute another citrus such as oranges, lime (which would be really nice ) or even pineapple juice. You could use white wine (not white wine vinegar but real white wine) but make sure it's a decent quality. Baked salmon often has a liquid in it depending on how it is being baked.

Hi prairie_north: Good question. I left red-cabbage-juice in my refrigerator for 1 week, and it stank like sauerkraut ... didn't work after that. Freezing it right away is best. It's known that frozen veggies, frozen right after picking ... retain their nutrients better than "fresh" veggies that sit for weeks in store. From the soil-chemistry test I took with 83 questions: loamy soil is best for root-growth. Loamy soil is a mix of sand & clay, plus organic matter. From Wikipedia: "Loam is soil composed mostly of sand and silt, and a smaller amount of clay (about 40%-40%-20% concentration)" https://en.wikipedia.org/wiki/Loam The fluffier, the better root growth. Root growth is best with 10 to 15% oxygen, so when I put COARSE organic matter like alfalfa hay, or grass cuttings, it works better than peat-moss ... large particle fluffs up soil best. I got a bumper crop on my tomatoes when I fluffed up FRESH grass clippings into clay in June. Coarse sand is needed for long-term separation of clay, since it doesn't break down and glue up with clay like organic matter. Roses like well-drained and loamy soil. Heavy clay is fertile, but it needs to be fluffed up with coarse sand or LARGE organic matter. I find that humus, compost, or well-rotted manure is good to enrich clay in the planting hole. In heavy clay, the high magnesium binds up with phosphorus and potassium, thus less blooms. Mixing in well-rotted manure will supply those nutrients. My bumper crop of tomatoes was when I mixed fluffy-cow-manure (NOT limed) with clay. That manure stank, but its phosphorus & potassium gave me a bumper crop. I also used bagged-limed-cow-manure (high pH of 8) to mix in the planting hole, it took tons of acidic rain to neutralize that to produce the best bloom for Golden Celebration rose. Now I use cracked-corn (pH 4) along with alkaline bagged manure, so those 2 opposing pH neutralize each other, when mixed with clay. For hard water, using SOLUBLE GYPSUM will lower the pH to rain water. I sprinkle less than 1 tablespoon of SOLUBLE gypsum per rose bush, and water that in with a hose. A bit of gypsum, only 8% in salt-index, helps to enhance the uptake of nitrogen, phosphorus & potassium, plus releasing the calcium bound-up in hard-water. I learn NOT to use any granular fertilizer when the temp is over 80 & less rain .. own-root roses are most sensitive to fertilizer-burn. SOLUBLE gypsum is safe in hot weather, if diluted well with water. Calcium, be it Azomite (pH 8), or gypsum (pH 6.8) helps plants to cope with heat in summer. Obviously to late for this evening....but i have to give it more time as well. I like to see 'white'. Some white over 'clear'. And i believe the flavor is elevated with a bit more time. And just a bit of finishing sea salt.

We are a bit spoiled getting scallops, uni, shrimp, squid, etc, and even some by-catch right out of the water of the NorthAtlantic, so a bit spoiled tasting 'on the dock' with a bit of lime or not. (i still bring it in and give it at lest a toss of a half hour.)

I offered the divers of scallops a warm kitchen fireplace and a warm cup of tea and we tossed some fresh scallops in Vodka and lime. (their suggestion)... and did a quick sear yet still raw.

(and i always mandoline very thin, a few hours before or that morning, some red onion, radish, cuke, ginger...and fresh pickle all those veggies as a side)

I ended up slicing 1/8", marinating in lime juice for 15 min, then arranging on platter and pouring more lime juice over.

It was pretty, but not very interesting flavor wise. Oh well.

We also had green beans, cooked in stock then fried in pork fat, served with sliced pork belly

Also a beet salad, deboned chicken brined, seasoned, grilled and glazed with honey and soy sauce, rice, a cake with olive oil frosting, and lots of wine.

A bear started approaching our table, perhaps scenting the food, so the chicken had to be moved indoors. The bear is the dark blob, heading inland away from us, in this photo.

Vacationing in South Lake Tahoe.

Our crew (we do this every year with the same group of friends) is eating slightly less this year. Everyone is watching their weight. Lots of talk about kale, low carb, etc. Plus most of the teenaged kids are not here. As a result, the food consumption is lower than during prior years.

This bear lives in the neighborhood, usually hangs out in some forested nooks, comes to the lake in the evening to drink. Stays well away from people. One night last year, my daughter and I slept on the beach chairs and watched a lightning storm across the lake. The bear was nosing around the water, about 200 feet away. We ignored each other, I fell asleep.

On the other hand, some bears get too comfortable. At the camp where my daughter works each summer, which is at 8000 ft in the mountains, there is a bear who regularly comes into the tent cabins looking for food. Once he brushed my daughter's leg as he was rushing out of her cabin. That bear will probably have to be tagged and relocated deeper into the mountains, is my guess.
