I think you should add a sliced apple or ½ cup applesauce to that sauerkraut to smooth the sharp flavor. For those who like a BBQ-flavored meal: 2 cups dried lentils, well rinsed, stones removed. ½ cup minced fresh onion optional: 1 carrot minced or grated 1 clove garlic, minced or smashed [or 1 teaspoon dried minced garlic] 2 cans [or 1 heaping quart fresh] diced tomatoes, including the juice 2+ cups water ¾ cup [or more] tomato-y BBQ sauce such as BullsEye. 5 chicken boullion cubes dissolved in 1 cup water [or 1 can chicken stock] -- or not: the chicken just adds a bit of flavor to the lentils. My crockpot is extremely slow to heat, so I usually dump everything into a regular pot, adding enough more water to cover the lentil mixture. Over medium heat, bring lentils to a gentle boil while the crockpot heats. As soon as both pot and lentils are hot [20 minutes or so], transfer the lentils into the crockpot. Check every couple hours, if needed, add more water to cover. Cook on high until tender [4 to 6 hours] and then on low until you are ready to eat. If you like a very BBQ-y taste, add more sauce to taste, and then serve mixture over cooked rice. I serve with cornbread on one side and a crisp salad on the other side; chocolate mousse or lime cloud-pie make a good dessert. For a skillet meal, spray large frypan with 1 tablespoon oil, sprinkle heavily with garlic powder plus ½ teaspoon salt. Brown porkchops on both sides. Lift chops out and cover pan bottom with sliced (¼") redskin potatoes, cover with paperthin onion rings, put chops on top, add enough water or chicken broth to be about ¼" deep. Put lid on pan and simmer until potatoes are tender (about 20 mins). Serve with steamed broccoli or a hot wilted spinach salad. A fruit dessert such as peach cobbler or strawberry pie goes well.

Well, here is what I am doing. I have it in the crockpot now. Everyone's recipes sound good, but I had all of these ingredients on hand. Didn't want to make the trip into town if I didn't have to. I made it simpler by coating the pork with the rub mixture, then placing in the crockpot and adding some of the basting sauce. I made the BBQ sauce, too, and will probably mix some of it with the pork before I freeze it. I'll let you know how it turns out. Barbecued Pulled Pork Sandwiches with Homemade BBQ Sauce Courtesy Emeril Lagasse 1 boneless pork butt, about 4 pounds 3 tablespoons dark brown sugar 2 tablespoons Essence 1 tablespoon salt 1 tablespoon ground cumin 1 tablespoon paprika 1 tablespoon freshly ground black pepper 1 tablespoon cayenne Wet Mop Basting Sauce, recipe follows Barbecue Sauce, recipe follows Place the pork in a baking dish. In a bowl, combine the sugar, Essence, salt, cumin, paprika, pepper, and cayenne. Rub the seasoning evenly over the pork to coat. Cover with plastic and refrigerate at least 4 hours or overnight. Preheat an oven or smoker to 225 degrees F. Bring the pork to room temperature and place in a roasting pan, fat side up. Slow cook in the oven, basting with the Wet Mop Basting Sauce every 45 minutes, until tender and the internal temperature reaches 160 degrees F. (The cooking should take about 6 to 7 hours.) Remove from the oven and let rest for 20 to 30 minutes. With a knife and fork or two forks, pull the meat apart into small slices or chunks. Toss with the Barbecue Sauce, to taste, and divide among the hamburger buns. Top with coleslaw. Serve with additional Barbecue Sauce on the side. Wet Mop Basting Sauce: 1 cup white vinegar 1 cup apple cider vinegar 1 tablespoon dark brown sugar 1 tablespoon red pepper flakes 1 tablespoon cracked black pepper 1 tablespoon salt The night before you cook the pork, combine all the ingredients in a large bowl and whisk well. Refrigerate and let the flavors blend overnight. Yield: 2 1/4 cups Barbecue Sauce: 1 cup apple cider vinegar 1 cup ketchup 3 tablespoons packed dark brown sugar 1 tablespoon yellow mustard 1 tablespoon molasses 1 teaspoon salt 1/2 teaspoon dried crushed red pepper In a bowl, combine all the ingredients and whisk well to dissolve the sugar. Place in a squeeze bottle and dress the pulled pork sandwiches to taste. Yield: about 2 cups Linda

You can find lots of variations on this red kidney bean curry online at Indian cooking sites, etc. This is the only recipe I can vouch for. Mixing up just the right balance for a curry I'm finding is very difficult. Also, for some reason I am just much more in love with the flavors of the Mediterranean. Here's another recipe I make in the crockpot. It is a soup, but pretty thick. Black Bean Soup with Red Paprika Sauce 1 lb. dried black beans, soaked overnight and drained. 8 cups water or broth (I always use mild veggie broth) 2 chopped med. onions 2 ribs celery 2 cups chopped tomatoes 2 TBLSP paprika 2 tsp. ground cumin 2 bay leaves 1/2 cup cilantro 1 cup corn Simmer beans and veggies until beans are soft. Then add tomatoes and spices and cook a couple hours more. Add the red paprika "sofrito" after the soup is done, just before serving. Do not add peppers to the dish while it's slow cooking, because peppers get bitter made in a slow cooker. I basically throw in everything except the tomato into the crockpot, add the tomatoes towards the end, and then when it's finished I stir in the Red Paprika Sauce. Yummo! Part of the charm of this soup comes from having good paprika on hand. If you miss a smokey taste in your black bean soup you can throw in some chorizo or ham or something. Being vegetarian, I sometimes add a tiny dash of fake bacon bits. Or fake sausage. But this soup I like plain. Red Paprika Sauce 2 TBLSP olive oil 1 large red pepper, diced 3 scallions, minced 2 tsp. paprika, or less, to taste 2 tsp. salt 2 TBLSP lime juice Sautee the peppers and onions in the olive oil and add the paprika, salt and lime juice at the end. Stir into the black bean soup. That's what gives this soup its yumminess, the addition of this fresh herb sofrito at the end. Here's another one that is easy and hearty, but I don't make it because it takes me so long to eat it up. Bean Cornbread Crockpot Casserole from vegetarian.about.com Serves 6 1 med. onion, chopped 1 med. green pepper, chopped (add at the end to the crockpot) 2 cloves garlic or 1/4 tsp. minced garlic powder 1 16 oz. can of kidney beans 1 16 oz. can of pinto beans (I'm not a pinto bean fan so I probably would use black beans) 1 16 oz. can chopped tomatoes 1 8 oz. can tomato sauce 1 tsp. chili powder 1/2 tsp. black pepper 1/2 tsp. prepared mustard 1/8 tsp. hot sauce or chopped jalepeno to taste Cornbread topping to be added at the last 1.5 hours of cooking. 1 cup yellow cornmeal 1 cup all purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 TBLSP sugar 1 1/2 cups milk 2 eggs 3 TBLSP veg. oil 1 can cream style corn (8 oz. can) Lightly grease crockpot. Add bean chili ingredients except peppers. Cook 8 hours on low. Add peppers and cornbread topping for the last 1.5 hours. Cook on high for the last 1.5 hours. (Directons sound kind of confusing but I think this is one of those "throw it in the crockpot and go to work and have dinner ready when you get home" recipes. So basically cook the bean chili all day on low in the crockpot, and when you get home make the cornbread topping and add the peppers. I'd sautee the peppers.) But I don't cook at all on the weekdays, so I made this on the weekend and adjusted the times accordingly. I cook the chili for 5-6 hours on low, then add the cornbread crust and the sauteed peppers, finish it off, and have it for Sunday dinner. And Monday, and Tuesday, and Wednesday, and Thursday, and Friday. Which is why I don't make this often!

Consider that you have two options. One is to find a recipe to actually cook in a crockpot. The other option is to cook in another method, and serve it in the crockpot to keep it warm. I like the second option best, you have a lot more choices of recipes. Here's one I like a lot. Take small red potatoes (2 to 2-1/2 inches). Wash, then microwave for about 5 minutes (well, for 5 potatoes for the two of us, plus leftovers, it's 5 minutes; for more potatoes, I'd do it in batches). Cool enough to handle, cut into 1" pieces, leave skins on. Toss with EVOO, S&P, chopped parsley, whatever other herb mix you like (there is no right or wrong), and some fresh grated parmesan cheese. Place on oiled baking pan, I try to keep then all close together but only 1 layer deep. Bake at 425 for about 10 minutes to brown. Transfer to crockpot for warming/serving.
