Frustration with General Contractor (GC) /Industry Obfuscation

We had our contract meeting our GC and we're feeling rather frustrated. He presented the contract as a whole, minus the cabinets and countertops, without breaking down costs for each subcontractor, or within each subcontractor's bid. In other words, we were given the complete package cost with no breakouts. The proposal is over budget, so without knowing more detail we cannot intelligently make decisions that could bring things in line. Is this a standard approach, or just the way our GC prefers to conduct business?

He has agreed to provide a breakout, but from his language we suspect it'll be in rather broad strokes rather than in detail.

We found it interesting that he omitted the cabinets and countertop bid from his overall proposal. We started with the cabinets before we met with him, so perhaps that's why, although this is a company that he works with. It makes us wonder if he's excusing himself from being the one accountable for dealing with any issues that may arise with them.

Also, other than the cabinets guy, the subcontractors would not submit their job bids to us and him. All bids went directly to the GC even when we requested a copy. We don't know if our expectations are out of line, or if this is just how this particular GC operates. What is your experience?
