How long can you store fresh vegetables?

So the garden harvest season is on... Eating lots of fresh veggies and thinking I really like fresh veggies so much better than frozen, canned or dehydrated. Picked beans for supper and ended up eating them raw. So I'm wondering which veggies can be stored for how long. More a thought experiment than a plan.

Carrots - 6 months or so in the fridge. They can be left in the ground - but I don't really dig them out from the snow and frozen ground.

Cabbage - a few months

Squash - 4-6 months in the coolest part of my kitchen

Tomatoes - typically in Maine a lot of green tomatoes are ripened inside in paper bags or boxes after the first frost. I think I used my last one last year in December but that is unusual.

Kale - gets very sweet once it's cold. Can be harvested right in the snow. Bambi usually gets it before me. I have picked some and packed in snow on my unheated porch. That worked for awhile.

Onions, potatoes and garlic......

Ideas?
