Comments (147)Annie, I just did a search on last year's swap, and you're right, Wendy did take over the hosting for me. Reading those threads brought back a lot of memories, so I'm gonna keep this short and go to work where I can get my mind on other things. Anyway, has anyone thought to ask Wendy if she's still up for hosting the December swap? Peace. -Dan...See MoreChinese Tea Eggs, And Other Food From Your Childhood
Comments (65)I've eaten dim sum in NYC, Boston, Philadelphia, Los Angeles and San Francisco. I was thrilled when a good dim sum restaurant opened in the neighborhood in Denver that has a high proportion of Asian residents, Chinese, Thai, Vietnamese, and Laotian. Our Japanese residents are mostly in the downtown area with Korean citizens living in both areas and in one of the suburbs, there are some very good restaurants in all these areas along with some very good Indian restaurants but good dim sum was lacking for many years until a small family restaurant in the Denver Asian area, there are long waits on the weekend days, Then about two years ago the same family opened a second restaurant, much fancier than the original, about twenty minutes from our home. The dim sum is just as delicious with a greater selection, on carts or to special order from a list, and the restaurant is very beautiful with large round carved dark wood tables as well as smaller rectangular ones, a very large live fish tank you can select from and beautiful etched glass panels dividing the space. I'm sure a lot weddings and special events are held there. A large raised area at the end can hold three round tables for 10 guests each. Not only is the food really good, the atmosphere lovely, but the family has also managed to maintain the same friendly and good service that is at there original location. No tea ggs though, maybe they are not a dim sum dish. But they are still on my to try list. Thanks for telling me about the congee, John, and it's fine that you are not an eggplant fan - I have recipes, just always looking for new ideas. Lee...See MoreTurkey, Turkey, Turkey -----------
Comments (38)Thanksgiving is the only day we eat turkey. The rest of the time, give me a roast capon or a duck prepared almost any way at all. DH and I are just not turkey lovers. My niece makes a very fine brined and roasted turkey, but once a year is enough for us. We're sauce and gravy people. Stews, braises, casseroles - we love them. I do a fair amount of cooking and a lot of dining out, and we hold that a fine sauce is a work of art. Even though we eat a lot of steaks and roasts, a great sauce is always to be admired. There are too many bad ones around to not acknowledge when something is done correctly. One of our favorite restaurants does a great poached monkfish. This is the fish known as "the poor man's lobster" for both its taste and texture. It's a great little fish, with wonderful flavor. But nap it with Amoricaine sauce, and it rises to a whole 'nother level. This is a Bretonnese classic, and for good reason. Red wine and marrow Bordelaise on a rib-eye? Absolutely! Black truffle cream sauce on a filet? Yum! Mop that goodness up with a well made starch - roasted fingerling potatoes, barley risotto, fresh pasta, freshly baked bread rolls. Gravy and sauce was the way to extend meat to feed a lot of people. Most of the world still loves sauced dishes as treasured childhood memories. Like soup, they are warmth and comfort, soothing and homey. Chicken strips that are velveted and steamed with lop cheong sausage (classic Chinese technique) are stunningly tender, almost as soft as sous vide but we like the flavor and texture better. Perfect with a roasted garlic-oyster sauce gravy over lots of rice! Far better than stir-frying or roasting. As Charles Phan of The Slanted Door restaurant in SF points out in today's WSJournal, steaming is considered the ultimate test of a professional chef in Asia. Getting back to the NY Times' and Pepin's suggestions for steaming, one of the greatest dishes in Chinese cuisine is steamed sliced chicken breast with thin slices of Hunan ham. My mother introduced me to this dish (she took classes from one of the leading Chinese restaurateurs in San Francisco) and it still ranks with DH and me as one of the three finest poultry dishes we've had in our 45 yrs of dining. A glaze should always be light. Heavy-handedness is the mark of a bad cook. Peking Duck would not be the same without the glaze applied, for example....See MoreSecond hand smoke survey
Comments (27)Thanks for validating my concerns, The Doctor was animate about his no smoking order. My ex dropped the doctor after I told him they wouldn't stop. She now withholds the medical card that I am supposed to have. Which was last ordered 11-18-08 . Her Husband and herself are about thereselves. I am trying to stay angry. Its hard to drag the kids into court, knowing how they will manipilate them. I have to submitt a witness list to the court very shortly. Attempts will be made by the ex and her husband to twist the kids minds. The kids are very passive and afraid of them. They have already convinced my daughter that her testimony would send her Mother to jail. So its on my daughters shoulders to save her Mom. My daughter was very withdrawn the whole afternoon and evening before she told me this. She had broke into tears like three times, She didn't go on the hay ride, she didn't join the cook out, or visit with the family at our gathering that evening. I asked my two older boys to nurture her that she was having a hard time. My 19 yr old said," She just went back to the house crying, because I said something wrong" I went in and told her, that her self esteem shouldn't depend on her brother, I didn't know what was bothering her. I've been with her when her Mom has ripped her on the phone. They've created a crisis for my daughter whenever she was with me, again and again. As I walked her to her car she gave me the message. That she dosn't remember anything because she don't want her Mom going to jail. The Boys are stronger, yet still afraid of theres Mom's wailings of poor me, poor me. How could you do this to me ETC. Or she will scream, rant and rave, reject, blame, all the stuff kids can't figure out. I'm going to get very assertive in court, I won't be shut down this time. This time I will let the court know I am fed up with the lies. Right. Thank you for the questions and the comments and advice. I dont think the next room is adequate for your sons asthma. You might research it. Cheers, Simron...See Moreplllog
