Whipping VS whisking eggs

I am not talking about whipping egg whites (that is all I find on the 'net when I ask this question.)

I have a Denver Beater out of the 50s that I use to whip eggs and find that it produces a final mix of a different consistency than if I whisk it. The Denver beater is a hand held, hand cranked dual beater device.

When I whisk eggs by hand, I get a good mix but it is, well slimy as best as I can describe it. I this is OK, not a complaint here.

I prefer to use my beater as I can move the blades extremely fast, almost violent, to produce a more watery, frothy, foamy result. It is better than using a blender but not much and there is far less to clean after.

I would like to know what is different between a slimy egg mix and a thin/watery one?

Although I have not seen a difference, is there actually one? Omelets, cake mixes anything?
