Black-Eyed Peas vs. Tepary or any other Bean Cook em Green Question.

Firstly I LOVE Black-Eyed snaps! I know most people eat them dried, but I just love them fresh off the bush green, cooked in a saucepan with a little bacon fat.

The drought comes along and I now ordered some Tepary Beans. The package says eat them green or dry. I'm going to plant them because they will die with too much water, and thrive with none. Can you eat them as snaps? Can you eat any dried bean as snaps?

If you haven't had snaps, you just are missing out on an amazing side dish. Pick the black-eyes green and young. Sit in a chair with a bowl in your lap, snap the ends into the bowl, remove the string and pop those green peas in there too. Now heat some bacon grease in a saucepan. Add those peas and snaps. Watch till it all goes green, cover with water and cook for 20 minutes or so. Yum!
