Comments (30)So sorry about your knee, Teresa. Mine are in a state of rebellion, too. Just sore from garden work, though. Hope yours gets all better soon. Had burgers on the grill w/ King Arthur home-made buns, stir-fried green beans and strawberry Jello w/ bananas on Sunday. Yesterday, marinated grilled chicken, chili bean salad, garlic smashed potatoes & Home-made dinner rolls. I tried a new marinade recipe (mustard & balsamic vinegar) that turned out really good & the rolls were made from a recipe I got here on the Cooking Forum. I think it is Lindac's recipe. Anyway, they were delicious. DSII ate one chicken leg and 4 dinner rolls plus more during the night...there's only one roll left this morning (plus a pan of eight that I put in the freezer.) And, yes, it was too darned hot to be baking bread but had to fire up the oven for the smashed potatoes and had some sweet potatoes that needed to be baked. Good luck with your surgery, Annie. Comments (5)I'm sorry about your friend, Marilyn Sue. That is a lot of meatloaf you will be making. We have a small chest freezer that needs defrosting so we are not buying any meat until we eat what is in there. Plus, I don't want to leave a freezer full of food when we will be gone for a month in Dec/January. So, I'll be cooking something out of the freezer but not sure what just yet. Comments (33)My husband spent nearly twelve hours smoking/cooking a large pork butt in the Weber yesterday. It's quite an ordeal (in my measly opinion, lol) but he has a system of loading the coals in a long snake that burns along slowly over that whole time. He used apple, cherry, and a bit of hickory wood chips at the beginning for that flavor. The basting sauce starts out thin and very vinegary at first, then more complex as the meat gets closer to reaching temperature. I'm in charge of that part. He has a gadget that keeps track of the meat temperature as well as the temp on the inside of the Weber and sends it to a little unit that he can keep near him inside. It informs him of when he might need to close down the vents in order to reduce the temp. It's the epitome of "low and slow" cooking, that's for sure. We're having it tonite.....friends are coming over for some poker in a bit. The pulled pork is better the second day, I think. I've got slider buns, a great slaw recipe with a bit of jalapeno pepper, sweet pickles, chips, and a good green salad. Friends are bringing appetizers and a dessert of some kind. It's worth the time to make ahead...tasty and a stress reliever for turkey day. I've added some sprigs of thyme, sage and/or rosemary. Up to you. Make-Ahead Turkey Gravy 3 lbs turkey wings (or combination of wings, thighs, leg) 2 medium onions, peeled and quartered 1 cup water 8 cups chicken broth 3/4 cup chopped carrots 1/2 teaspoon dried thyme 3/4 cup flour 2 tablespoons butter 1/2 teaspoon pepper Salt, to taste Heat oven to 400. Arrange wings in a single layer in a large roasting pan. Scatter onions over top. Roast 1 1/4 hours until wings are browned. Put wings and onions in a 5-6 quart pot. Add water to roasting pan and stir to scrape up any brown bits on the bottom. Add the brown bits to the pot. Add 6 cups broth (put remaining 2 cups in fridge) add carrot and thyme. Bring to a boil. Reduce heat and simmer, uncovered. 1 1/2 hours. Remove wings. Save wing meat for another use or discard. Strain broth into a 3 quart saucepan, pressing vegetables to extract as much liquid as possible. Discard vegetables. Skim fat off broth and discard. (If time permits, refrigerate broth overnight to make fat skimming easier.) Whisk flour into remaining 2 cups broth until well blended. Bring broth in pot to a gentle boil. Whisk in flour/broth mixture and boil 3-4 minutes to thicken gravy and cook flour. Stir in butter and pepper. Add salt, to taste. Serve or freeze up to 6 months....See Morechispa
