Comments (27)Missed this, but good to know that those wild pigs are good for something...eating. :-) I just made a simple chicken stir fry with what veggies I had on hand. Nothing too time consuming with a split work schedule. A local farm just had the best crop of peaches in 80 years. I went there and bought enough to have several to eat fresh and sliced and froze the rest for later. I saw something online about scoring the skin, dropping them in boiling water for 20 seconds and the skin peels right off. You then plunge them in ice water to stop the cooking process. Worked like a charm! Made the process go much quicker. It's interesting seeing what people eat from different areas of the country (countries). Comments (5)I'm sorry about your friend, Marilyn Sue. That is a lot of meatloaf you will be making. We have a small chest freezer that needs defrosting so we are not buying any meat until we eat what is in there. Plus, I don't want to leave a freezer full of food when we will be gone for a month in Dec/January. So, I'll be cooking something out of the freezer but not sure what just yet. Comments (35)Made my first batch of cooked eggnog on Sat so it could chill overnight. I dose it with rum and bourbon, and like to try different brands. A friend visited Cuba earlier last year (before travel was closed down again) and I told him to buy me a bottle or two of the most expensive Cuban rum he could find. I offered to give him money upfront - I was thinking $100 - but he said since we didn't know what he would be able to find, he'd just ask for reimbursement when he returned. So he comes back with a bottle of 7-yr old rum for me. Gives it to me and says, "$15, please". I'm dumbfounded. "Is that ALL? Really? $15?!? The last specialty rum I bought was $50!" "Oh - well, they did have one for $40," he admitted. I had to close my eyes, I was so pained. Hey, he meant well and schlepped it all the way back to the West Coast to bring to me. And the $15 bottle he did get is absolutely lovely, better than Mt. Gay which is twice the price. I had not opened it until now, and it was a great addition to the nog. The thing is, the rum distillery in Cuba was the original Bacardi Rum factory. When the Communists took over, they kicked Bacardi out but kept making the same rum. I figured this was my only chance to get a true old-style rum - and unfortunately, travel there is now banned again. Sigh. The 7-yr old rum is so good....I and my rum-drinking friend (who also swooned over a taste of it) agree we cannot even imagine what the $40 rum must be like! Comments (25)Getting back to a routine, tonight is grilled pork chops, asparagus and either sour dough baguette, rice pilaf or a potato dish. Tomorrow, I'm going to marinate pieces of lamb in preparation for making lamb kabobs. There will be lamb, mushrooms, onion, zucchini and bell pepper placed on the skewers and then they will be grilled over a hot fire.
