Comments (32)Angelaid, I love potato pancakes but I would say that is is my favourite version. There is no secret to making these pancakes. I've made them with mashed potatoes that I made specifically for making these pancakes and I've also made extra mashed potatoes for dinner and saved the leftovers for these pancakes. When I make them with the leftover mashed potatoes there is also butter in the mix. This is not a stiff or thick batter. I use a 1/4 cup measuring cup to scoop up the batter. Mere Blanc's Potato Pancakes From:www.thedailyspud.com with very minor changes. 2 small baking potatoes 1/4 cup milk 1/3 cup All-Purpose flour 2 eggs, separated 1-1/2 tablespoons heavy cream Pinch of salt Pepper Fresh chives (or green onions) Butter for frying Cook potatoes until tender Mash with a little milk. Let potatoes cool before adding the remaining milk, cream, flour, egg yolks, salt, pepper and chives. Beat Egg Whites until stiff. Fold into potato mixture. Do not over mix. This is a light but thick batter. Heat a griddle or skillet. ( I used a rectangle electric frying pan) . Brush with butter. Using a 1/4 cup measuring cup drop batter on to griddle. Comments (22)Another traditional Pennsylvania Dutch New Year's meal here. It is a given in this part of the country, pork cooked with sauerkraut. Mashed potatoes to go under the 'kraut on my plate and corn and applesauce on the side. I always add a few hot dogs and some smoked sausage to the pork/kraut roaster about an hour before it's well done. Comments (9)Along the lines of the pizza place, find other restaurants that deliver and give gift certificates and their carry out menu. I always wanted housekeeping for a month or so, but never did get it :( Maybe next time. A once a week service, someone to mop the floors, clean the bathrooms. There are various levels of service. But most of all, I love it when I am sick, or after a new baby, my mom comes and does all my laundry. She did that recently for me. I have 3 kids (that's a lot of laundry) and have had terrible morning sickness with #4 lately. It is more appreciated than I can even put into words! Comments (5)I love dinner parties, too, but if I got an invitation to one from someone I didn't know, just dropped in the mailbox, there is no way I'd attend that party. Inviting people to dinner is probably not the best first step in making new friends. It's a bit too much, too soon. The way to meet your neighbors is to get out of your house when they are also outside. Smile and say "hi" to people you meet on walks. Go over to next door and ask them a question--could they recommend a plumber? a good pizza place? somewhere to buy a ladder? Get to know people first, then invite them over. You could have a dinner party where you invite three of your newly-met neighbors and ask them all to bring one new person to the party. I did one time realize that all the tenants in my three-family house and the two houses next door were all single women. So I arranged a summer afternoon get-together with all of us, just so we could meet and know who our neighbors were--and who we could call on if we needed some help. Tea, lemonade, cookies and some fruit, and about two hours of fun conversation. It was easy for people to come and go, and not feel locked into staying for hours, as they would with a dinner party.
