To Paint or Not To Paint (Our Kitchen and Bath Cabinets)

We've bought a house with real maple wood cabinets (kitchen, bath, and built-ins throughout the house) with a clear varnish, which has yellowed over time. The cabinets themselves are in good condition but the finish is very old-fashioned and we don't care for it.

We'd like to paint them out to look more modern, but we're not sure which way to go. Considerations:

1) A highly durable finish

2) Creamy white cabinet color that won't yellow

We've looked into milk paint from General Finishes, (and also chalk paint from various manufacturers), but our general contractor says it's best to lacquer the cabinets and is not comfortable having the paint contractor use anything but lacquer due to durability and the drip factor.

However, I don't want a high gloss finish (satin at best) and am wondering if satin finish is even possible with lacquer. I'd also like not to be sniffing the fumes for years to come.

HELP! Any and all advice are welcome. Photos are of cabinets in question and the dream cabinet situation.
