Comments (25)Nicole - here's a link to the recipe I used http://www.food.com/recipe/not-your-usual-lemon-artichoke-chicken-177737 Since I was just cooking for 2, I only used 2 chicken breasts but made the entire amount of sauce and all of the artichoke hearts. I added the capers, as well. Other variations of this recipe called for using creme fraiche instead of cream, and frozen artichoke hearts (thawed) instead of canned and that's what I did differently. Comments (21)We were out of town running errands today, it was Costco day. Couple of other stops, when I'd planned for Friday earlier in the week I'd forgotten it would be Veterans Day and everyplace would be crowded and with sales. I'm not great with crowds ;0) and the lines to pay at Penney's were silly long but we did accomplish what we'd set out to do. Comments (14)We have the Sprites overnight, so G'pa can have a date out of the house. We made our pizzas from scratch as we often do on Friday, then grilled them outside. They like all of the usual toppings, and even some different options like shrimp and spinach on a white sauce pizza. I mixed up some Greek yogurt, chopped fruit, and honey and made little frozen pops for dessert. They are in their jammies; we've been watching School of Rock, and they've been loving it. Comments (25)Spaghetti, and homemade meatballs from yesterday. I really love the meatball recipe, but it takes many hours of prep (which I usually try to do the day before) for a large batch. Then my basil plant could not provide sufficient foliage for the 3/4 C of minced fresh basil, and a trip to TJ added to the time. Luckily, I still had frozen sauce, so that part was simple.
