With that small amount of flour and the other supporting ingredients, you can easily choose from a number of things. I'd suggest you give it a try with 1/2 a recipe to see if you like one more than another, but whatever you use, you will get pancakes, so try something you already have at home. I would use almond flour, buckwheat flour or oat flour - and I bet even quick oatmeal would work just fine. Any of the all-purpose gluten-free flour mixtures would also work, but they aren't my go-to choice. Personally, I carefully watch the amount of high-glycemic g-f flours I use, especially rice flour, which also comes with an arsenic component as another reason I give high consideration, and rice flour is in nearly everything that is commercially sold as gluten-free. So that's why I make my own g-f food at home. Coconut flour is another choice you can use, but it will only take a small amount - maybe a tablespoon (if making the whole recipe), because coconut flour absorbs so much moisture. I would also let the batter set a few minutes after adding the coconut flour because it will be completely different thickness after it has time to absorb the moisture in the batter. I occasionally use a mixture of hi-maize resistant starch and unflavored whey protein isolate for small amounts of wheat flour. The hi-maize starch adds a lot of fiber and the whey adds more protein for us carb-watchers. This is what I often use when I need a Bisquick substitute: (yield: 1-cup) 1/2 c. almond flour 1/2 c. hi-maize resistant starch 1-1/2 t. baking powder (gluten-free) 1/4 t. salt 1 T. coconut oil (or your favorite fat or oil) Blend together. I also wanted to give you a recipe which we love here. My measurements are sloppy but have my faithful pumpkin seeds included! 1.5 cup or so ground pumpkin seeds 1/2 cup or so ground flax 4 eggs 2 finely shredded medium carrots large handful unsweetened coconut 1/2 cup applesauce 1.5 tsp cinnamon, 1/2 tsp cardamom, 1/4 tsp nutmeg 1/2 cup or so raisins 1.5 tsp baking powder 1 tsp baking soda 1/4 cup honey 1/4 cup olive oil or any oil any addition of chia seeds, nuts, etc I think that is it. I add contents as I remember them as it isn't fussy like regular recipes. I bake at 350 from 35-45 minutes. Not sure what happened with the spacing here....

I too like Grainlady, enjoy her posts, have learned from her, agree with her on a number of things but I also disagree with her on things. I consider Grainlady a friend and a wealth of knowledge. Perhaps I gave her a heart attack when I posted what an old gf used to do with a turkey! IDK. But I read the "vegetable" thread and don't see that she stormed off and said she was never coming back. Has someone actually talked to her and gained more info than what's being speculated here? Or is there another thread or something? Maybe I missed something. Maybe she did in another thread, IDK, and I haven't seen it. I also know that there's times she'd be gone a while and come back, as do a lot of people. She has a busy life. But I've also noticed a change in her in her more recent posts and I guessed she had some stress in her life. She seemed a lot more sensitive than usual and seemed to me to overreact to comments at times which was so uncharacteristic of Grainlady. I recall one thread where there was a comment that was simply a different view and she was unusually upset by it and really, well, pounced like I've never seen from her. If she has troubled times for whatever reason I wish her well. I too miss her. But if she needs a break to take care of things in her life it's not up to us to comment like it's a funeral for her. She's an adult and will, and should, make up her own mind if and when she cares to participate. She knows she's welcome here. Grainlady, I wish you well in whatever you do and decide and hope to see you posting soon.

It has been about a year and a half. Yes, she is missed by many. I doubt there is just one 'stinker'. Probably cumulative over time, then she was done and made what seemed like a snap decision. I think she deleted her final post but it has been some time so my memory has faded a bit. I was unaware of other forums she was active in until trying to contact her soon after her departure. Often 5-6 lengthy posts a day for ten years can be time consuming and must have been a snapping point where her time could be better used in her community. Lucky for those in her community she is teaching and giving her time and effort first hand, in person. On my other gardening forum, not houzz, a senior member with extensive knowledge and very appreciated, had a member needle poking. I call it 'tailgating'. For a few months he was posting two or three words, short and sweet immediately following every post of hers. Confusing until after one lengthy posting, he posted 'yawn'. It was immediately clear he had been insulting intentionally for all those months. I believe he was terminated. Gone. One thing that became difficult to ignore was the misunderstanding of poverty. As if no other can grasp that so many are in dire need. And that so many have poverty first hand in their past. Either childhood or stories from Grandparents. Or first hand in our communities and how we all contribute being more fortunate now. No, I don't think she can be found. Only Houzz forum staff know her e-mail addy. She did have a short lived blog. And was on a 'self-sufficient' other forum with a group of appreciative followers for a short time. If she is elsewhere on another group that is practicing self-sufficient practices with food stock pantries and on a tight budget for various reasons, she may have a new user name. Calling anyone on this cooking forum a 'food snob' was so out of character being stock makers, gardeners, stretching a dollar and composting, minimal garbage waste....eating fresh whole foods, not processed, learning and avoiding big Ag... I don't believe it was the frozen veggie postings. She did not even say it was a practice of hers, just what she was helping dollar-stretched seniors try and get variety in their diet and meals on a budget. Avoids the boredom of same-same. My mother does that because dad does not like broccoli and cauliflower in her soups. Re-bags for a side veggie. Not in soups.
