Need help in understanding surround sound

I have had a surround sound system for several years and am still confused about all the options available to me on my receiver. I understand that movies may have the extra sound channels encoded and for best results, I should use the same decoding system. But that information is usually not apparent to me. Also, what happens if my source is not encoded, such as for a CD or analog radio. Are TV broadcast movies encoded? Usually, I just switch between the various encodings until it sounds best. My receiver has 17 different DSP programs.
