Comments (8)As a diehard Saints fan, you can bet your sweet bippy I'll be screaming at the TV next weekend. Here's my contributions: SPINACH ONION & BACON DIP 1 lb. bacon, cooked and crumbled 1 (10 oz.) pkg. frozen chopped spinach, thawed & squeezed dry 1 large onion, finely chopped 3 (8 oz. each) pkgs. cream cheese, softened 1 (5 oz.) pkg. shredded Parmesan cheese 1 cup shredded Mozzarella cheese 1/2 cup mayonnaise Corn chips, Wheat Thins, or Triscuits Preheat oven to 350° F. Combine all ingredients except chips/crackers in a medium bowl. Spoon mixture into a 2-quart baking dish. Bake 30 minutes, or until hot and bubbly. Serve with chips and/or crackers. Serves 12-15. Dip may be made ahead up to 2 days ahead of time, covered, and refrigerated. Let stand 20 minutes before baking as directed. Recipe courtesy of Paula Deen. BANDITO CHICKEN WINGS 12 whole chicken wings (about 2 lbs.) 1/2 tsp. salt 1/8 tsp. pepper 1/2 cup butter, divided 2 Tblsp. vegetable oil 1/2 cup taco sauce 1/4 cup barbecue sauce 1/4 cup French salad dressing 1 tsp. Worcestershire sauce 1/8 tsp. hot pepper sauce Cut chicken wings into three sections; discard wing tips (or save for stock). Sprinkle with salt and pepper. In a skillet over medium heat, combine 2 Tblsp. butter and oil. Fry chicken until brown, about 6-8 minutes on each side. Place in a greased 13-in. x 9-in. x 2-in. baking dish. In a saucepan, combine taco sauce, barbecue sauce, French dressing, Worcestershire sauce, hot pepper sauce and remaining butter; cook and stir over medium heat until butter is melted and sauce is blended. Pour 1/2 cup over the chicken wings. Bake, uncovered, at 300° F. for 15-20 minutes or until chicken juices run clear. Serve with the remaining sauce. Yield: 8-10 servings. Comments (35)I am fixing beef and pork barbecue sandwiches, baked beans, fried potatoes and cole slaw plus a rich chocolate cake. This sounds great, Sue! Just the sort of meal DH (and I) would really like. We really like to make BBQ pulled pork in the slow cooker. Yum! He and our guys will also want hot wings, jalapeno poppers, chili-cheese dip with Tostitos Scoops, potato skins, etc, throughout the game. We'll be together with family next Sunday -- some pulling for the Saints, some pulling for the Colts. It ought to be verrry interrrresting, LOL. As for myself, I have mixed feelings -- I was a huge fan of Archie Manning eons ago when he was such a great QB for the then-perennially losing Saints (aka the "Aints" back then). I usually pull for his sons, both Peyton and Eli. I'd be in a real fix if the Colts and Giants met in the Super Bowl, LOL. Comments (38)We are huge Steeler fans - we made sure that we were done eating by 4pm because our stomachs were so nervous, we couldn't eat after that :) We had: Vegies/dip Cheese/crackers PA Dutch ring bologna/Pepperoni Cold Crab dip Shrimp Cocktail Clams Casino Spread Hot Artichoke/Spinach Dip Homemade pita chips Roethlis-burgers Homemade pierogies Fudge Brownies with PB frosting Everyone stayed overnight after that emotionally draining game and got up early this morning to go home - oldest DD had to drive over an hour to get to work from here and youngest has a 3 1/2 hour drive back to college. Comments (22)Jim , "sliders" are very trendy now. Here is the recipe that appeared in Bon Appetit. I made them awhile back and they were very popular. Meatball Sliders Bon Appétit : September 2007. I served them in small puffs because I couldn't find small rolls. Next time I'll make small savory rolls. 1/2 Lb ground beef 1/2 Lb ground pork 1/2 Lb ground veal 1/2 Cup panko (Japanese breadcrumbs) 1/2 Cup water 8 Tbl freshly grated Pecorino Romano cheese divided 1 large egg 1 large egg yolk 1/4 Cup plus 2 tablespoons chopped fresh parsley 1 Tsp salt 1/2 Tsp ground black pepper 1/4 Cup vegetable oil 2 Tbl olive oil 1 Cup chopped onion 6 garlic cloves chopped 1/4 Cup (packed) fresh basil leaves 1 1/2 Tsp fennel seeds 1 28-ounce can whole peeled tomatoes 1 14.5-ounce can whole peeled tomatoes Arugula leaves (optional) small soft rolls split horizontally Mix all meats, panko, 1/2 cup water,6 tablespoons cheese, egg, egg yolk,1/4 cup parsley, 1 teaspoon salt, and 1/2teaspoon black pepper in large bowl.Form into eighteen 2-inch-meatballs.~ Heat vegetable oil in large skillet over medium-high heat. Working n batches, fry meatballs until brown all over. Transfer to plate. Pour off drippings from skillet. Reduce heat to medium. Add olive oil to skillet. Add onion, garlic, basil, and fennel seeds.Saute until onion begins to brown,about 5 minutes. Add all tomatoes with juices. Bring to boil, scraping up browned bits. Reduce heat to low,cover with lid slightly ajar, and simmer,stirring occasionally, about 30 minutes. Puree sauce in processor until almost smooth. Return to same skillet.Add meatballs. Cover with lid slightly ajar and simmer until meatballs are cooked through, stirring occasionally,about 30 minutes longer. DO AHEAD:Can be made 1 day ahead. Cover; chill. Place arugula leaves on bottom of each roll, if desired. Top each with meatball. Drizzle meatballs with some of sauce and sprinkle with remaining 2 tablespoons parsley and 2 tablespoons. cheese.
