Appetizers for Super Bowl

Friends of ours have been doing a Super Bowl gathering for almost 20 years, for between 10 & 20 people. When they moved a few years ago they really upped the ante when they bought a 70-inch TV. LOL.

Anyway,I almost always make an appetizer because we get there earlyish. I just browsed the CF Holiday Hors d'oeurves & thought you might like a reminder of them. I'm also considering Pioneer Woman's BACON-WRAPPED JALAPENO THINGS, http://thepioneerwoman.com/cooking/2008/01/superbowl_extravaganza/

Edamame is, IMO, the perfect football watching snack, if that's what you are looking for.

It's tasty and healthful. Easy to prepare. Lets you nibble slowly over a long time without giving you a full or logy feeling. Goes great with beer.

The PW's Bacon Wrapped Jalapeno Thingies are very good, but labor intensive. I think broiling a big batch of chicken wings (to remove excess fat) then basting them with wing sauce until done would be easier on the cook. Or, broil the wings then put them in a crock pot with a good, spicy BBQ sauce. I broil the wings on cooling racks set in a large sheet pan. This gets them brown and crispy w/o frying them.

Served them at 9 at night made them at noon time let them cool and put in refrigerator until we left for my friends house...did not cover them with any wrap thought they get soggy, reheated in the oven but later on that night when all kids were watching Friday the 13th the threw some in the microwave. This is a easy yet adapable recipe I could think of 100 things to put in them...like mozzarella,pepperoni & sauce (mini calzones),chopped beef onion & cheese whiz (hand held Philly cheese steaks), Apple,cheery ,bluberry compote....half moon pies...oh I can go on. I left the extras at my friends she actually called me this morning to say her .hubby and the 4 kids ate the left overs last night when they came in late from Lacrosse. May be smart to make a bunch and freeze these are great for snacking & dinner with a salad. Like I said I have a bunch in the freezer for superbowl. The disc at my local store comes 10 for about 1.59 they come in white or light orange. When I make empanadas with meats I use orange but Id use white for pie or scambled egg thingy's Now im sure you could make your own and thats great but the idea was I needed something last minute and they came together so fast it was rediculous and they were really tasty! If you try this or another rendition Id like to know....I ponder making the disc smaller by using a cookie cutter and filling with cream cheese and chopped jalepenos..kinda like a popper without the bread crumb. My kids love Jalepno Poppers to make I found them tedious and to buy expensive...so I might try this.

Thank you for the follow-up, Becky. Still, I'm inspired to come up w/ a roasted chicken pasta bake since you mentioned the dish up thread. I've come up w/ a pasta & veggies bake that the family loves and I'm thinking that I can incorporate chicken (maybe chkn tenders) to move it from just a side dish to being an entree. I've been lightly steaming broccoli & carrots and mixing the veggies w/ cooked rotini. Pasta & veggies go into a glass baking dish & gets drizzled w/ olive oil & seasoned w/ grated romano, fresh garlic & liberally doused w/ that no salt seasoning (house brand stuff from Big Lots, of all places!) Pop into the oven for 30 minutes or so. Maybe I could lightly saute some breast tenders and top the pasta dish w/ the tenders & finish in the oven? I doubt I would have thought to expand on the dish w/o your having mentioned the recipe you were going to try. Ci

As every year, we are going to friends who have a 70" TV. They usually invite a dozen or people & it's a potluck. I'm making two appetizers: Bacon-Wrapped Jalapeno Thingies 20 Fresh jalapenos, 2 Â 3 inches in length 8 oz. Cream cheese, softened Thin, regular bacon, sliced into thirds Slice the jalapeno in half length-wise. With a spoon, gently scrape out the seeds and white membranes. Smear cream cheese inside each jalapeno half generously. Wrap 1/3 slice bacon around the jalapeno snugly, but not tight. Stick a toothpick through the middle of each one; this will keep the bacon from coming off in the oven. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes. Serve hot or at room temperature. Transfer to a colander and rinse under cold running water to stop cooking. Drain well and pat dry. Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved. BAKED POTATO SOUP (serves 2-4) 1 cup sliced celery 3/4 cup chopped onion 2 TBL butter 2 TBL flour 2 cups half-and-half 1 tBL chopped parsley 1 chicken bouillon cube or 1 tsp chicken granules 1/2 tsp salt 1/4 tsp pepper 4 large baking potatoes, baked & cubed Garnishes: grated Cheddar, sour cream, chopped chives, bacon bits In a large saucepan, saute the celery & onion in butter for 8-10 minutes until tender. Blend the flour with 3/4 cup of the half-and-half. Add to the celery & onions, blending well. Add 1/2 cup water, the parsley, bouillon, salt & pepper. Simmer until heated but do not boil. sitr in the potatoes. Add the remaining half-and-half & heat through without boiling. I'm planning to heat up a pre-made pizza and cut them into small squares, and a plate of veggies dip. Goes great w/beers! Ooops, forgot... I don't drink beer...

Oh, and of course, will have a tray of meat and cheesy nachos. (It's tradition at my house;o)

As a diehard Saints fan, you can bet your sweet bippy I'll be screaming at the TV next weekend.

Here's my contributions:

SPINACH ONION & BACON DIP

1 lb. bacon, cooked and crumbled
1 (10 oz.) pkg. frozen chopped spinach, thawed & squeezed dry
1 large onion, finely chopped
3 (8 oz. each) pkgs. cream cheese, softened
1 (5 oz.) pkg. shredded Parmesan cheese
1 cup shredded Mozzarella cheese
1/2 cup mayonnaise
Corn chips, Wheat Thins, or Triscuits

Preheat oven to 350Â° F. Combine all ingredients except chips/crackers in a medium bowl. Spoon mixture into a 2-quart baking dish. Bake 30 minutes, or until hot and bubbly. Serve with chips and/or crackers.
Serves 12-15.

Dip may be made ahead up to 2 days ahead of time, covered, and refrigerated. Let stand 20 minutes before baking as directed.

BANDITO CHICKEN WINGS

12 whole chicken wings (about 2 lbs.)
1/2 tsp. salt
1/8 tsp. pepper
1/2 cup butter, divided
2 Tblsp. vegetable oil
1/2 cup taco sauce
1/4 cup barbecue sauce
1/4 cup French salad dressing
1 tsp. Worcestershire sauce
1/8 tsp. hot pepper sauce

Cut chicken wings into three sections; discard wing tips (or save for stock). Sprinkle with salt and pepper. In a skillet over medium heat, combine 2 Tblsp. butter and oil. Fry chicken until brown, about 6-8 minutes on each side. Place in a greased 13-in. x 9-in. x 2-in. baking dish.
In a saucepan, combine taco sauce, barbecue sauce, French dressing, Worcestershire sauce, hot pepper sauce and remaining butter; cook and stir over medium heat until butter is melted and sauce is blended. Pour 1/2 cup over the chicken wings.
Bake, uncovered, at 300Â° F. for 15-20 minutes or until chicken juices run clear. Serve with the remaining sauce. Yield: 8-10 servings.

Pat - that Bacon, Onion, Spinach Dip sounds great and I will be making it for the SB, but I will probably leave out the Spinach. LOL!

Not sure what else will be on the menu but there will be a huge pot of Jambalaya at the ready for half time!
