morz8, tips for your TJ cherry pie!

I saw your post in the dinner thread and didn't know if you'd return to see my post, so here I am with tips. The Trader Joe's cherries made an excellent pie! You need two jars for a 9" pie and drain them well! I got five cups of cherries--quite a bargain!

I couldn't find a recipe so I winged it. I was really afraid of ruining my pie but it came out perfect. I used 1 c. of sugar, 1/2 tbsp. of lemon juice, and 3 tbsp. of tapioca flour. You should be able to substitute cornstarch. Dot with butter. It was very juicy when warm from the oven but it was the perfect consistency the next day out of the fridge. So you'll want to add a little more thickener if you serve it warm or at room temperature. Or maybe cornstarch is a better thickener. I'd never used tapioca flour before but I wanted the cherry sauce to be clear.

The cherries would be just as good on cheesecake or in a cobbler.
