I saw your post in the dinner thread and didn't know if you'd return to see my post, so here I am with tips. The Trader Joe's cherries made an excellent pie! You need two jars for a 9" pie and drain them well! I got five cups of cherries--quite a bargain!

I couldn't find a recipe so I winged it. I was really afraid of ruining my pie but it came out perfect. I used 1 c. of sugar, 1/2 tbsp. of lemon juice, and 3 tbsp. of tapioca flour. You should be able to substitute cornstarch. Dot with butter. It was very juicy when warm from the oven but it was the perfect consistency the next day out of the fridge. So you'll want to add a little more thickener if you serve it warm or at room temperature. Or maybe cornstarch is a better thickener. I'd never used tapioca flour before but I wanted the cherry sauce to be clear.

The cherries would be just as good on cheesecake or in a cobbler.

Thanks mayflowers! I bought 4 jars, thought it would likely take two each pie. I usually use the quick cook tapioca for berry pies so may use that. Thanks for the tip on the sugar, I haven't opened a jar to know how sweet. The jar says slightly sweetened but reviews I read said sugar needed....

I'm glad to know you liked the cherries, I'd never bought them canned but had read those were good and was there, saw them.

How much tapioca would you use for one pie?

The cherries weren't sweet at all out of the jar. I was happy that it tasted just like a cherry pie should, and it was chock full of cherries. I hadn't made one in ten years.

I have read that in this instance that people can do two grafts. The native variety being the most hardy and strongest rooting, then a short intermediary piece which can bridge between the native and fruiting varieties. Can anyone assist? Or know someone who can? I have cut down a large native cherry and would like to graft lapins and stella to the sprouts which are sure to come up this spring. My dh' favorite dessert is cherry pie, and I have made dozens of pies in the 22 years we've been together--high school sweethearts. Fresh sour cherries are difficult to find and also very expensive. Even frozen sour cherries are scarce. We lived in the Detroit area for a few years and even then it was difficult to find pie cherries. We were young newlyweds, so it wasn't possible to afford to stock up on cherries for more than a couple of pies. We were fortunate enough to have a few friends who introduced us to Trader Joes and Zingermanns. Then we moved to Chicago and discovered Richard Walker's Pancake House in Crystal Lake. We fell in love with the Montmorrency cherry Belgian waffles. A friend mentioned that Trader Joe's Monchello cherries were similar and made a wonderful waffle and crepes topping. I then tried making a pie filling with them, which my dh loved. I agree with those that say tapioca makes the best thickener. My key for the best filling is cooking it on the stovetop to ensure the correct thickness and flavour. I take the filling off the stove when it's still a bit too runny because it will continue to cook in the oven. I've also made pies with sweet cherries-- fresh and frozen. I add a bit more lemon for tartness and less sugar. I'm not a fan of a lot of almond extract. A few drops of real almond extract in the lemon juice for making filling with sweet cherries gives it a little j'en n'aise pas although I prefer a little splash of Amaretto in all my pie fillings if possible.

Lars, I am going to have to try that one... too interesting not to, lol.. I buy cottage cheese to have on hand for a childhood comfort food of spaghetti and cottage cheese, so next time I'll buy a large container and try it. I'll report back. I like the Nathans crust, and that perfect butter crust that Terri posted is about what I usually do. I don't usually use a recipe since I've made so many pies, often in large numbers. That crust that uses 5#'s of flour is a good one too. I love oatmeal so I'm going to have to try Ann's Maple Oat one too. We picked up a bunch of apples today at the heritage farm, and I think that would be good with them. Thanks for posting it Terri. The only one I don't care for is the one that uses vodka. I've tried it a couple times and just didn't care for it. Didn't care for the taste and texture could have been better. I drink vodka, so the taste shouldn't have been a problem, lol. I do better winging it.. smiles. Those pie crust pinwheels were made with the last of that crust I had frozen. I didn't even like it used as that but luckily Christy liked them. Wasn't my technique, since I have no trouble with a light hand anyplace else, plus I made it twice, had to give it a good chance. But, hey, that's what this place is about. Not everyone will like every recipe.

We do a lot of our shopping at TJs and Costco. I wish we had Ikea. I like TJs fresh vegetables...they keep well. I like their avocados much better than Costco. TJ simmer sauces, red and green curry (I usually doctor them, but they're a decent base. Simmered the green down with a can of coconut cream...yum.) We're hooked on the organic corn chips. They're like fritos only not as greasy. Grade B maple syrup. Frozen wild caught salmon fillet. Sweet potato fries. Their mustards. Harvest Grain mix. Olive oil. And triple ginger cookies. I grab a few of their frozen things to keep at work. They're a little bland but don't have a lot of unpronounceable ingredients. Rotini w/grilled veggies and pesto, bowties w/spinach and cheeses, chili relleno and the cheese enchiladas aren't bad with some sour cream and salsa. The mac and cheese is ok too, for frozen. Costco for most of our staples. We're pretty happy with Kirkland brand. Organic sharp cheddar is good. Lately we've been getting the baby romaine. Makes great lettuce wraps.

How much - not sure, I'm going to have to wing it ;) I've made so many blackberry pies from frozen berries, I have an eye for how much Minute Tapioca I will need for a firm filling when I see how juicy those berries are when thawed and it's not always the same - 3 - 5 Tablespoons. Think I will just need to guess when I've opened a jar, I'll eat one, see if I get a feel for the plumpness. Did you find they cooked down much more with baking or had the canning pretty much softened them and released the juice....

I like a pie to cut in slices without running so may err on the side of too much first try. My closest TJs is an hour away but if its good I'll pick up more, will usually do Costco and TJs (about 10 minutes apart) approx. once a month.

No, they didn't cook down, not like a berry. I think 5 tbsp would be too much. I'd do 4 for your first wing-ding. I quickly drained mine--I didn't set them in the colander for more than a few minutes.

Here's a TJ pie where she didn't drain the juice. I was going to make a lattice top until I saw this.
