I think I will go for the shorter vanity and leave more space for ease of cleaning. I believe our final choice is this one, it is 84" so will leave us 10" on each end. I also verified the legs are 5 & 7/8" tall so plenty of space for the Roomba to fit (it needs 4") to my joy. This is our master bath opening off the bedroom. We are also doing the guest bath, it currently has a 66" vanity with the toilet beyond and then tub across the end. The tub is staying here just doing the floors and vanity, here it is now: and for this room we picked a 48" vanity to center under the light fixture, which will leave 9" between the vanity and the wall on the left and an additional 9" of space between the vanity and toilet, or we may be able to sneak the vanity an inch or 2 off center to the light to give 10-11" between the vanity and wall. It will provide space for a towel ring to hang nicely, especially since the vanities are shorter on the ends. Now the question is the vessel sink model - DH immediately picked this version and loves the look of the vessel sinks. However the vessel sink version is actually a few inches shower at the counter (28.13" on short sections and 35" to top of vessel sinks) than the sunken sink version (31.63" H on the side/center areas and 31.63" in the sink areas. We would actually prefer a height closer to 33-35" for the counter, perhaps we could switch our the legs with something taller. My other concern with the vessel sinks is the square/flat bottom and the fact that DH's shaving whiskers will tend to linger, while the sunken sinks are rounded toward the drain:

This design site lists international building code and international plumbing code requirements which are supposed to be the minimum even in locales without local code enforcement, and then recommendations in addition to that. My locale is fairly lenient with code interpretation because of very old very small housing stock but as soon as you touch a bathroom, you have to meet the 15" and 4" requirements for sinks. ----------From the website---------------------------------------------- Recommendation: The distance from the centerline of the lavatory to the sidewall/tall obstacle should be at least 20”. Building Code Requirement: The minimum distance from the centerline of the lavatory to a wall is 15". (IPC 405.3.1) The minimum distance between a wall and the edge of a free standing or wall-hung lavatory is 4". (IRC R 307.2) Comments: A pedestal or wall mounted lavatory must meet both of the Building Code Requirements. The center of the lavatory must be at least 15" away from any side wall or tall obstacle, such as a tall cabinet, and the edge of the lavatory must be 4" from the wall or tall obstacle. There are practical reasons for the 4" requirement. Any closer and it would be very difficult to clean the lavatory. In a small bath remodel, careful attention needs to be paid to the size of lavatory sinks to ensure that minimum offset distances are met. When in doubt, go smaller. Almost all fixture manufactuters make lavatory sinks designed to fit very small spaces.

emilyam819 re moving the toilet, I've thought about that and I love the idea for the reasons you state, but I'm not sure it would meet the code requirement for space on either side of the toilet. If it were possible, I could have a decorative and useful radiator/towel warmer under the window where the toilet is now.

@suezbell: No countertops along that one wall (that's a window to the outside, not a pass through) as it will become a breakfast nook... so there will be a table facing the long built-in bench, and two chairs opposite... leaving space for the fridge to open. Tested the veggie drawers etc in the store, looks like it will behave like the old fridge and come out. Great point about the bathroom vanity... So I measured my largest pans as well as other appliances like the instant pot, deep fryer, etc (as the new unit will also need to store these) and after reading all your feedback I'm thinking I should do 18" cabinets opposite the stove. This allows for a 45" aisle. At the moment, my regular pots and pans fit into two 21" (inner depth) x 30" (outer length) drawers. So I'm hoping they might all fit if I turn the entire bottom section of the new unit into storage for pots/ pans/ appliances. Something like 3 sections (24"/ 30"/ 24") of double pots and pans drawers.
