WARNING: Silpat, induction and wok do not mix!
Comments (25)Silicone rubber is pretty inert to most chemicals, but it does dissolve slowly when subjected to silicon oil. Either silicone brake fluid (DOT 5), or various silicone sprays should aid removal of silicone rubber bonded to your wok. If the oil you use works for you it will probably also remove any silicone rubber from the cooktop without damaging the glass, but the operative word here is probably. Obviously, remove all the silicone oil before cooking on the hob. Remove oil, if any, from the cooktop with the provided cleaning solution (provided at least in the case of the Kenmore). Remove from the wok with detergent, or auto body paint prep cleaner, e.g., duPont 3900S. By the way, another datum for this topic. DW left the house one day with the tea kettle on high on our Kenmore induction cooktop. When the kettle ran out of water, it heated the silicone pad beyond its limit. Fortunately, the cooktop shut down on its own. Maybe a hob temperature sensor is included in the Kenmore. We removed the silicon pad from service due to elastomer breakdown, but it did not end up sticking to either kettle or hob. The pad being used was the Sili Gourmet silicone bake liner, by William Bounds, Ltd. These are all-red silicone (no transparent part). kas...See MoreWhat Size Pots/Pans fit Max Burton Portable Induction Unit?
Comments (19)Definitely need to stir porridges with MB units. Ran an experiment this morning with cooking oatmeal in a small, 1 qt saucepan (5" diameter magnetic base). The MB had trouble with low heat settings with the small saucepan. At a "2" setting, the small pan would intermittently boil furiously in a torodial pattern and then shut down, boil, shut down, etc. A "3" setting was manageable with frequent stirring. With the previous experiment with the 2 qt sauce pan, the small bubbles started out in a ring shaped band, but quickly spread across the whole bottom and gave an very even boiling. Did not think to look with smaller pan this am, but note the cooking description above. I agree that overnight in a crockpot is much the better way to cook steel cut oats. I was only experimenting because of amck's posting. I use my MB for pretty much the same reasons you do and for "cooking stations" at some large parties. Sounds like Tuesday Morning could be a good deal. We used to have one in the nearest big town (actually, our state's largest city), but they pulled out a year ago. Apparently, our market area was deemed too small for the turnover they wanted....See Morekas - use of silpat on induction cooktop?
Comments (24)Kas You have a lovely set up there. However, in my experience the induction cooktops are super easy to care for. I wipe mine down with the washcloth after doing the dishes, spritz it with "multi-surface cleaner" to remove the streaks and only use the cooktop cleaner when I start to see a sort of film over the cooking surfaces. Routine daily cleaning takes about 30 seconds. It's as good as new, if you ignore the stainless at the front and back. I followed the instructions when I first installed mine for a while, but decided I'd rather tolerate a little wear. However, there is still no evidence of wear after this amount of time. I don't want to discourage anyone from selecting induction because the think it is fragile or requires difficult care. It isn't and it doesn't. The thing is the absolute bomb in my experience. It's wonderful for cooking and easy-peasy for clean up. We're house hunting again and I don't want a kitchen with one of those big, fancy gas ranges ... now the racing red Viking induction range would be another matter!...See MoreDoes your Springform pan leak?
