Comments (15)Brenda, the "Knucklehead" wine is a white zinfandel. How is it? I wouldn't know, I still haven't learned to like wine, LOL, but his son said it was pretty good. I haven't yet tasted it. Elery says I have my own "wine grading scale" with 1 being worst and 5 being best: 1. Gag, gasp, choke. 2. I wish I hadn't swallowed that but it was too icky to spit out. 3. That sucks. 4. Comments (53)Martha Scott, I don't know how old you are, but I'm 62. I still don't think that adding a cup of water to a package of mix for gravy is "cooking", but I do know that a lot of the younger generation(s) just don't cook at all and this would be a stretch for them. There is such a proliferation of convenience foods and fast/casual restaurants and delivery services available that it seems "old fashioned" to some young people to cook. Unfortunately it's that availability and mindset that brought us a generation of children that think chicken only comes in nuggets and causes us to be the most unhealthy we've ever been. (sigh) writersblock, maybe it's my age, but none of my aunts, my Mother or my Grandmother who lived with us ever used a package of frosting mix, I didn't know they existed until I was a young adult. The only convenience food I ever saw was canned soup, an occasional frozen dinner, Appian Way pizza and Jiffy Mix which my Grandmother used occasionally for banana bread because it was made in Michigan. They were all terrible, LOL. Olychick, I have made the Hot Milk Cake into cupcakes, to be used for strawberry shortcake They worked OK, but I was careful not to "handle" the batter too strongly so I didn't reduce the loft I got from beating the eggs. Just remember, this is not a "light and fluffy" cake, so it won't have the cake mix texture that most of today's kids recognize. Plllog, my cream cheese frosting is simple. A stick of butter, a package of cream cheese, beat it together. Add as much powdered sugar as you want, the more you add the sweeter it gets. I usually use a pound. Add a teaspoon or so of good vanilla and a tiny bit of cream if you need to. You're done, it's frosting. 4 ingredients, maybe 5, less than 5 minutes. Plus you have a bowl worth licking. You somehow knew I was going to ask about your frittata, right? Thank you for including the cooking times, methods, and ingredients. I wanted to make a frittata the other night but was low on veg’s. I’d never have thought of potatoes on the bottom like a potato anna… You’ve inspired me… Now, are you positive that's not burned/charred, rather than browned? Ha, ha! neely, I’ve never tried that, but will have to as it looks good! I’ve made fruit and coffee ices in the freezer - not the same. ann_t, there was a huge Fed Ex truck outside late last night and I told DH “That’s Ann’s quail – she shipped some to us!” He looked at me like I had lost it. Wishful thinking… ; ) Your quail, salad, and potatoes would have made my year! Yum! ann_t, the website with pizza pan required an order of $100 minimum, so I had to purchase a cheapo version elsewhere. That pan was 20 gauge and would have been lovely... sigh. Cooking is hit and miss just now. Last night was leftovers, tonight I'm not sure. Comments (88)Long version: I was at the Kroger local subsidiary. They have some weird butters there so I was looking for anything new. There's a black label Land O Lakes "extra creamy" with the 110 Calories per 14g serving, 12g fat that the butter labelled 86% butterfat has--but the LOL nutrition info says 82% butterfat. It has 0 carbs and 0 protein. Their regular unsalted butter says 11g fat per 14g serving, and older, but probably still true, info on the web says their butterfat percentage is between 80.93% and the note from CS said 80%. I sent a message. asking about the disparity for the extra creamy butter and was told it was rounding error. I had assumed that, but .... Is it a measurement issue? Standardizing volume is tricky. How even and flat is the measure? How much is lost as residue? Etc. So my assumption was that the 14g on every label was the real standard. Perhaps I'm wrong. If one assumes, however that the 14g is exact, 12.0g is 85.71% and 11.0g is 78.57%. So, therein lies the rounding. But how do we get the same number of Calories as in the 86% butterfat butter? I'm thinking it's some kind of standardized number. The note from LOL said that they were following the FDA guidelines, which may dictate exactly how the math is done, including rounding by truncation rather than up or down from 5. So then I looked at Vital Farms, again. It's not cultured, but it is from pastured cows at smaller farms (implication is that they eat grass as well as feed). It has the same 14g serving with 12g fat and 100 Calories, and claims 85% butterfat. In the long run, I might prefer the cultured butter, but short of ordering it from a store 3000 miles away, it's going to take a lot more effort to get hold of. I can at least practice with the Vital, even if it may have slightly less depth of flavor. So now I just have to clear off the small appliances, etc., and clear some time, and I can at least make a start on the puff project.
