Why does some olive oil....
Comments (4)You can check out Olive Chemistry for variations in olive oil and the percentages of Linolenic acid allowed. A smaller percentage of this acid will make the oil more viscous whereas the larger percentage will make it less viscous, I think. The oils with a smaller percentage typically come from areas with warmer climates while the ones with a higher percentage are from cooler climates. While the ones with the smaller percentage are considered (by some) to be more desirable, the ones with a higher percentage may have more health benefits. I haven't been storing olive oil in the fridge, except as vinaigrette, and so I haven't made comparisons. I recently ran out of Portuguese olive oil and replaced it with Syrian olive oil. Actually, I didn't do this - DB picked up the oil at the Lebanese market on his way home, and he bought a much larger bottle (2.88 liters) than I wanted. I use it every day, and so I guess I'll go through it. The flavor is marginally adequate for vinaigrettes. Lars...See MoreOlive Oil Cake
Comments (13)Well, I wasn't going to post this because I didn't want to go "off topic" but you gals asked for it . . . Here's a link to an article in an e-Zine about Michael's take on eating locally. It's an "interesting" article, so check it out. BTW, totally intended. Be still my heart. Comments (8)While not being one of the great cooks on this forum, this is my 2 cents. Have bought olive oil while experimenting with new brands that was just not up to par . . . .so I just use them like any other oil. Have added butter or another ( canola, vegetable,to alter it a bit), works for me. However the better cooks on this forum will probably have better ideas! Red...See MoreQ about olive oil
Comments (21)The reason they sprinkle olive oil is that olive oil has a very low smoke point and will "brown" the veggies better than other oils in the broiler. You need to oil the veggies in the broiler otherwise they just shrivel and dry out. If you use other oils they don't brown and just get greasy. The low smoke point is the reason you cannot use olive oil in a deep fryer. When using a wok, peanut oil is one of the best as it has a high smoke point and gives a nice flavor to veggies. If you want veggies to brown in the broiler spray some sugar water on them. The sugar browns them nicely in the broiler but be careful not to leave them in too long and burn them. Sugar will caramelize at 275° . And do not ever try to splash wine or brandy on veggies in the broiler or you risk starting a fire as the alcohol will ignite into flames. Wine or brandy is a nice touch when sauteing and/or degazing though....See More- 10 years ago
