Recessed, pendant, or sconce over kitchen sink?

We are in demo right now and the current plan is for a recessed light over the sink. However now I'm thinking of doing either a pendant or a sconce. The pendant would be in the same spot as the can but obv there would have to be a change in the electrical plan if I do a sconce since it would be in the wall over the sink. There is already other recessed lighting in the space so this would be for a spotlight on the sink but not needed for lots of light in the space.

The dining is a banquette seating area open to the kitchen so it's not formal.

My my kitchen is a small u-shape with this basic layout:

Except I have a slide-in range (no wall ovens) with OTR microwave. Open to the DR with an L-shaped banquette.

I will have shaker grey cabinets on the base and white uppers. Soapstone counters and a marble subway backsplash.
