I brought it inside and inspected it, briefly. Any debris that it might have picked up from the concrete floor was disguised by the herbs encrusted on the crunchy skin. As for bacteria.......we just look our life in our hands and ate it with no regards whatsoever to the consequences, lol.

Be darned if I was going to wash that beautiful skin!

Now, it would be different if it was dropped on bare soil. I'd have to rinse it should that ever happen. I promise!

I never serve the skin anyway so just take it off. My turkey is always off the bone and into baking dishes before it is ever served.

I told this story on another post a day or two ago, but it is still funny.When my mother was a little girl (she was born in 1922), she was at her grandmother's and everyone was at the dining table waiting for the turkey to be brought in. There were those saloon doors between the kitchen and dining room and only she could see under them. The adults could only see the doors. As her grandmother started to bring the whole turkey on the platter, it slid off onto the floor. Her grandmother calmly scooped it back onto the platter and placed in at the head of the table to be carved and never said a word. I bet your turkey was great. It was so warm I wish I had thought of doing mine outside.

My screened in back porch is kept pretty clean as far as visible dirt goes, but I confess that I'm not overly concerned about any microscopic germies that might abound on the floor. And I spent too much time basting and perfecting the seasonings to consider rinsing that browned crisp skin, let alone peeling it off. Sorry, but it was turkey skin that would have been a crime not to gobble up.

And I still wonder whose house has bacteria only on the floor? When they do tests most finicky housekeepers counters, sinks and stoves seem to have way more bacteria than peoples' toilets and telephones!

Yes, the Julia story is an undying myth, part of the legend surrounding her. There's a similar story about the wife of a former president (Coolidge?) who was entertaining guests for Thanksgiving. The maid brought the large turkey into the dining room and it slid off the platter onto the floor.

The hostess just said, "Never mind, just take it back to the kitchen and bring out the other turkey." [wink wink]

Don't know if that cute story is a myth as well, but they are both cute.

Speaking of Julia, I remember one particular episode of her program when Chef Jacques Pepin was her guest. The topic of dropping something came up and they both fully agreed with each other that "as long as you're alone in the kitchen....."
