Sorry, I meant to post this a few days ago.

Mashed Potato Stuffing

Big Idaho baking potatoes - I figure one per person
2 large onions - get 3 if they're smaller than softballs
4 sticks of butter
1 big loaf of white bread
1/2 cup of minced garlic

Cut off the crust of the white bread and toss it away. Cut the
remaining bread in half and half again. Put it into a large mixing bowl.

Cut the potatoes into chunks. DO NOT PEEL THEM! Toss 'em in a pot of
water with the garlic and boil them until the skin starts to peel off.
When they're just about done, chop the onions and saute them in the four
sticks of butter.

Dump the butter and onions onto the bread
chunks and mix well. When the potatoes are done, drain them well and
then dump them into the mixing bowl. Mash and mix until they look
like...

Wait for it...

mashed potatoes!

Let the
stuffing cool in the refrigerator for several hours or even better,
overnight. Stuff the turkey with as much as you can. When it's cooked,
heat the balance of the stuffing and mix it with the stuffing from the
turkey. You should have enough for a dozen hungry people.
