What's for dinner?

I'm thawing out pinto beans and making some cornbread for me and Alex tonight. I didn't think he would eat them but he says he eats them all the time. Huh? When did he start eating "soup beans?"...he then reminded me that I sometimes open a can of the mashed "pintos" when we have tacos.

Tomorrow is ham, mashed potatoes, chicken stuffing, gravy for the mashed potatoes, peas or green beans, rolls and pecan pie for dessert. I was outvoted on the type of meat we were having.

I'm also baking some chocolate chip cookies and a almond/cheese cake roll thing later this evening. Going to take both to a friend's tomorrow and have some for us.

Well, tonight is nothing fancy. Roast chicken, broccoli, baked sweet potatoes and ice cream topped with Chambord and fresh berries. Tomorrow is a roast loin of pork, apple cider sauce, peas, parsly mini potatoes, lemon and raspberry dessert, mincemeat peaches.

We are having ham, cooking at the moment in the oven...we are having for dinner tonight...a squash casserole, cole slaw, brussel sprouts and it all came from my garden...Tomorrow I am taking green beans, squash casserole, crowder peas and cole slaw...all from my garden...How cool is that?

We went out to eat! Daddy had a French dip, Lola had well cooked salmon with sweet potato fries and slaw, Ben had chicken tenders with a cookie (ain't it fun to be young!), April had a club sandwich, I don't know what Mark got?, Susie and Tiff had fish tacos (I had them last Tuesday so I didn't want them again) barramundi, one had slaw on the other had red beans and rice, and I had chicken tenders. Yikes. Nothing worse than waking up and realizing "here it comes", knowing the next 5-7 days will be miseable while it goes its course. And sometimes longer will secondary issues. Nice to be on the mend. Usually early Spring here can be miserable with cool temps in the 40-50ºF rainy and damp. Freezing snowy weather is dry and not so bad. I was planning to use a chowder base, SummerTonic, a fish corn chowder-ish. Did a 180 and made something up making a fish stock with one of the smaller heads and a collar. (butter, white wine, leek, celery, shallot) Fish stock is a quick 30-45min. Broth was epic with the miso-ginger-lemon-wakame-hijiki Tonic. Poached two of the larger collars in the broth 8-10 min and into our bowls under the noodles. (collars are full of tender meat) Shared at the table between us... Larger head and two collars food savered for the freezer. A pint of cubed fish, (tuna, salmon, halibut) and two collars. Future chowders. Seasoned glass noodle was an excellent choice.

Thank-you! That is informative, but I still can't imagine it (though I did know about turning it out and setting it on fire from TV). I did find a local (SoCal area somewhere) brewery that makes barley wine (Guiness stout is readily available at most grocery stores), and the butcher at the snooty market has jars of beef tallow and lard, so I don't think they'd faint if asked for suet, but it might have to be a special order. But, please, what is "whole candied peel"? Oh, never mind. I googled it in quotes and it showed me packages. We have chocolate chip cookies... ;) But seriously, I've read about Christmas pudding so really enjoyed seeing it in the basin. ("pudding basin", right?) Does it get frozen, or is this like some fruitcakes which sit out in their wrappers and get fed bourbon once a week?

I seared three chicken breasts (I cut them in half) in the Dutch oven. Tossed in a large, diced, onion. Sprinkled with half a cup of taco seasoning. Added two cups of water. Lower heat and simmer until the liquid is reduced and chicken can be shredded. Add eight cups of enchilada sauce. Let all that simmer while you boil, drain and rinse your lasagna noodles and mix up the filling: 24 oz Ricotta, a tub of baby spinach, 4 cups of shredded colby/jack cheese (I don't like pre-shredded cheese and couldn't find blocks of "Mexican blend" to shred my own) . Ladle spoons of the enchilada sauce (without the meat - skim it off the top) to cover the bottom of the pan. Start layering your lasagna: noodles; meat sauce; filling; noodles; meat sauce; filling ... etc. This pan was four noodles wide and fit three layers of noodles. So eyeball three portions of the meat sauce and filling for each layer. Use the meat sauce for the layering and you should have quite a bit of the sauce left to pour over the top. Sprinkle with two more cups of shredded colby/jack, a can of sliced black olives and one bunch of chopped green onions. Bake at 350F for about an hour. Let rest while you make up a simple side salad of shredded iceberg lettuce, diced tomato and sliced avocado. A dollop of sour cream and a dollop of salsa on top.

Leftover fried chicken (from the deli), leftover pea salad and rolls. Hey we had a busy day!

Tomorrow, rock cornish game hens (which are marinating in Chinese 5 spice, sherry, soy and red pepper). Also, Harry's rice casserole (it's yummy and he made up the recipe), steamed asparagus, cranberry relish (DH made), yeast rolls and banana cream pie (frozen crust but I did make the filling from scratch).

Tonight it was leftover chicken.
Tomorrow, Christmas Day, it is out with friends for Chinese dinner.
Talked with one son tonight. He said we needed to start a new Xmas tradition now that we are so far from family. Told him we do have Xmas tradition. We went out for Chinese last year on Xmas day!

Tonight I made lasange and hot rolls. Tomorrow we are having ham, potato casserole, hash brown casserole, sweet potato casserole (see a theme here? lol) and I am hoping a vegetable!! MIL must have been in a potato mood when she told me and my SIL's what to bring.

Tonight we had baked spiral sliced ham, hot rolls and a big bowl of raw vegetables. DH is having mincemeat pie for dessert. I will probably have a TUMS! LOL Bettye

Tonight was steak on the grill, baked potatoes, stewed tomatoes, green salad, hot rolls....just me, DH, and DBIL

Tomorrow is lemon chicken, baked maple ham, mashed potatoes, baked sweet potatoes, fresh green beans, carrots, and Rachael Ray's Apple & Onion Stuffin' Muffins. About 15 of us around the table tomorrow evening.

We had Ham, Sweet Potato Souffle, Green Beans from the Garden, and Creamed Corn and Hawaiian Sweet Rolls...i'm stuffed and the dishes are STILL in the sink...time to go stuff the dishwasher!

Years ago, when DD was little, my husband started making Christmas Eve dinner. I do a lot of baking for the holiday (I do all the desserts, and usually the breads for our family feast) and he wanted to give me a break. Problem is, the man can't cook. So our 'traditional' C. Eve dinner is: pizza made on pita breads. Hey, as long as I don't have to fuss, and there isn't a lot of extra clean-up, I'm a happy camper. They were delicious, and we somehow managed to get them baked in between the oven being used for my pumpkin toffee cheesecake, and the brownie layer for my Kamora Brownie Cream Torte.

Not to mention the other dinnertime emergency that cropped up (see my 'he's Sweet' post)
