Herb Roasted Tomatoes

Stop what your doing, get your hands on some end-of-season tomatoes, and make these herb roasted tomatoes right now!!! I mean it, this is AMAZING.

Yesterday, I was reading an online interview with gardener, and cookbook author Alana Chernila and spied her solution for end-of-season tomatoes when she has had enough of canning. She slow roasts them with olive oil, salt & pepper, and herbs.

So, I thought, "Hey, that's what I'll do with that bowl of tomatoes on the counter!"

After 6 hours of slow-roasting, this is what I ended up with:

Imagine sun dried tomatoes in olive oil, BUT BETTER. I could barely stop myself from eating these right off the cookie sheet!

I cut my tomatoes in half, placed them on a cookie sheet flesh-side-up, gave them a hearty drizzle with some olive oil, a sprinkling of kosher salt, black pepper, Penzey's Italian Herb Blend, and just a touch of garlic powder. Then tucked them into a 275° oven for 6 hours.

Heaven! The house smelled so good, like I was baking the world's best pasta sauce or pizza.

Their flavor is incredibly deep, rich, and sweet from a nice, slow roast that caramelizes all those natural sugars.

Alana freeze hers and I am going to do just that, right after I make something amazing with them tonight for dinner! Now I need more tomatoes. :-)
