Comments (8)make an angelfood cake to put that ice cream with. Real, home made angel food cake is nothing...NOTHING like a mix or the bought stuff....and it takes about 12 whites to make a cake! Angel food cake...Swan's Down Flour box 1 1/2 cups sifted flour ( sift first, then measure) 1/2 c. sifted sugar sift together 3 times 1 1/2 cups egg white at room temp 1/4 tsp salt 1 1/4 tsp cream of tartar Beat until soft peaks form....add 1 1/3 cups of sifted sugar a little at a time and beat until stiff peaks form, Add 1 1/2 tsp pure vanilla extract and 1/2 tsp almond extract, beat to blend. Fold in the combined flour and sugar 1/4 of the amount at a time. Pour into an ungreased tube pan ( it must be a pan that has never been greased and used for rolls or something else, or the grease in the cracks of the pan will not allow the cake to "climb the pan") Place in a pre-heated 375 degree oven and bake 40 to 50 minutes. Better to over bake than under bake. Linda C...See MoreRECIPE: Progressive Dinner for Feb 1
Comments (25)Okay... So I mentioned my problems with appetizers... Same deal with first courses. You're going to have to forgive me -- what I'm posting bears a little resemblance to a salad, but I wanted to post something T&T, and I also think given that the meal is heavy overall, this is a nice light starter. Zucchini Carpaccio 2-4 small to medium sized zukes (depending on how many people you want to serve) Small container of whole milk ricotta 1/2 cup pine nuts, toasted One bunch fresh mint 1-2 lemons fresh ground pepper, coarse salt extra virgin olive oil With a vegetable peeler, peel zukes into many ribbons, peeling the long way. Arrange artfully onto small plates. Add small dollops of fresh ricotta on top. Chiffonade the mint, and sprinkle liberally over top. Add lots of fresh ground black pepper and coarse salt, then squeeze fresh lemon juice on top and drizzle with good extra virgin olive oil. Finish with a healthy sprinkling of the toasted pine nuts. Comments (6)That would have looked very nice decorated all the way round, but yes, egg whites needed a lot more beating. The old Hershey's recipe for fudge can be made quite hard. Let it cook for a minute or so past the soft-ball stage, then when you beat it, don't stop as soon as it stops looking glossy, keep beating till it starts to come together, and you'll get a hard, sort of crystalline fudge: Rich Cocoa Fudge Ingredients: 3 cups sugar 2/3 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa 1/8 teaspoon salt 1-1/2 cups milk 1/4 cup (1/2 stick) butter 1 teaspoon vanilla extract Directions: 1. Line 8-or 9-inch square pan with foil, extending foil over edges of pan. Butter foil. 2. Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.) Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely. Cut into squares....See More- 11 years ago
