Monday nite's dinner

All last week we had cool fall-like temperatures. We're in another heat and humidity stretch this week.

I made hamburgers, home-fries and coleslaw for dinner. We'll have a couple of pieces of zucchini-chocolate cake that I made out of a honkin' zucchini.

Sue you are always so busy, running around. You must have a great time with the girls.

Mary, I haven't had chicken and dumplings since my Nan died, decades ago. She made the lightest fluffiest, dumplings. I just bought a another second-hand slow-cooker on the weekend and we used it for chicken as well. I'm thrilled with it.

GM, I love meat and cheese with salads.

Rhizo, we like breaded and fried eggplant. Zucchini would be just as good!

I have been gone again, supper for me was M. C. Salisbury steak meal with roasted red potatoes, brown gravy, the steak, and broccoli and cauliflower with cheese sauce. Good and quick.

I made chicken 'n' dumplings in the slow cooker. Leftovers...yay!! :)

It was a great day. Sunny and in the low 70's. But the best part was eating a whole dinner. Yes, my friends, for the first time since-- I think it was September. I had meat loaf, gruyere potatoes and broccoli. The meat loaf and potatoes I'd made and sealed and pulled from the freezer. I also had 2 apples so I peeled and sliced them this morning and put them in the little crockpot with some brown sugar, raisins, and cinnamon sugar. Too full to try them tonight. Yesterday I was going to make vegetable soup and put a roast in the crockpot. Later, Harry's daughter called and we talked so long I forgot to check it. By the time I tried to take it out, it was instant pulled beef. It literally fell apart. So today I made a slurry of flour and water, added it to the meat and broth along with some onion I already had chopped, some fresh parsley I needed to use and a little Kitchen Bouquet for a nice color. Now I have three bags of that stuff in the freezer (so much for cleaning it out) that I can thaw and have with mashed potatoes, rice or just on plain bread. I love bread and gravy. I also kept a little out for dinner tomorrow or Wednesday. My mouth is a little sore, but my tummy is happy!

pawsitive, I don't know where you live but in VA they repeat the show on Saturday night at 8:00. There was a neat exchange between Harry and the office girl (don't know the character's name) and yes the girl was head of the car theft ring.

so frustrating...had to hit Verizon again to pay bill...they removed me from paper bill in error...then headed up to best buy thinking they had repaired my big computer...(not done) so ok... headed to wal mart. none of my special chai tea, none of the sugarfree candy we like...did pick up some pantry items...BUT! walked out into a downpour! by the time I got home, pulled a container of stew, and crawled into bed to warm up...but it was really good for the dreary day...we were luckier than some in the Detroit area...they had flooding!!

We woke up to a light rain this morning. It's got a nip in the air and got up to 62 degrees. We liked it! :0) Very hearty and I put hot sauce over mine. 3 lbs potatoes, diced(small) & boiled, skins on 1 lb bulk breakfast sausage 1 cup diced raw onion 6 eggs 1 Tbl flour 1/2 lb grated cheddar cheese Seasoning salt & pepper to taste Fry the sausage, drain any grease off & add onions in a skillet until fully cooked. Press the potatoes into a 13 x 9 casserole dish. Spoon the sausage mixture over the potatoes. In a large mixing bowl whisk eggs, flour, salt & pepper. Pour over casserole, distribute the grated cheese over the top. Cover with foil. Bake 1 hour @ 400 degrees. This post was edited by nicole__ on Wed, Sep 10, 14 at 21:10

I made a cold cucumber-yogurt soup from a new recipe and it turned out great. Also had fried zucchini patties, grilled chicken with a sesame ginger sauce.

Jasdip, tonight I used a pkg. of Grands Jr. Biscuits and cut them in half. They were ok but I used to buy the small box of Jiffy Biscuit mix and drop by tablespoonful. , they were so light and fluffy. I need to go back to those!

I just made a couple of hot dogs with cincinnati-style chili sauce and shredded cheddar.

rhizo I'd love to see how your cucumber yogurt soup recipe compares with the one that I make.

We grilled kebobs- skinless chicken thighs, mixed summer veggies marinated in a Peruvian chicken sauce. Served over whipped purple potatoes.

Bob, I used Andrew Zimmerman's recipe, without the tarragon (I don't grow it). I made the soup this morning and it was super flavorful by dinnertime.

Mary, I don't like biscuits for dumplings. I like the soft, fluffy, light-as-air ones.

I'll really have to try making it sometime. Of course, hubby likes the biscuit type. LOL.

We had BLT's with cole slaw & macaroni salad. Well my husband had a BLT, I just had a B. I eat mine on plain bread with just bacon-nothing else.
