Monday nite's dinner

All last week we had cool fall-like temperatures. We're in another heat and humidity stretch this week.

I made hamburgers, home-fries and coleslaw for dinner. We'll have a couple of pieces of zucchini-chocolate cake that I made out of a honkin' zucchini.

How was your day and what's for dinner?

Sue you are always so busy, running around. You must have a great time with the girls.

Mary, I haven't had chicken and dumplings since my Nan died, decades ago. She made the lightest fluffiest, dumplings. I just bought a another second-hand slow-cooker on the weekend and we used it for chicken as well. I'm thrilled with it.

GM, I love meat and cheese with salads.

Rhizo, we like breaded and fried eggplant. Zucchini would be just as good!

I have been gone again, supper for me was M. C. Salisbury steak meal with roasted red potatoes, brown gravy, the steak, and broccoli and cauliflower with cheese sauce. Good and quick.

I made chicken 'n' dumplings in the slow cooker. Leftovers...yay!! :)

so frustrating...had to hit Verizon again to pay bill...they removed me from paper bill in error...then headed up to best buy thinking they had repaired my big computer...(not done) so ok... headed to wal mart. none of my special chai tea, none of the sugarfree candy we like...did pick up some pantry items...BUT! walked out into a downpour! by the time I got home, pulled a container of stew, and crawled into bed to warm up...but it was really good for the dreary day...we were luckier than some in the Detroit area...they had flooding!!

Fun2BHere, that sounds really good to me right now! OldFixer, always nice to have a job where you can skip out to seek the sun! I'm laughing about the rum cake every night.... you made it, right? Is it the kind that's like a pound cake soaked with a sugar-rum glaze, or is it the Italian version with a yellow cake split into many layers and filled with various pudding/fruit/rum mixes, or is it something else entirely?

My day was very, very busy again. I'm so tired, I want to go to bed already. Dreary weather in Ohio, but no rain. I fixed chicken tenders tonight. My one sister makes them with just putting P.Newman Olive Oil and Vinegar on them and baking. I liked them that way too as they weren't dry. Next time though, I'll add a little red pepper flakes for color and kick. Had mashed potatoes and fordhook lima beans. I hope you can get some pain relief while you're waiting to see the dentist. Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

I made a cold cucumber-yogurt soup from a new recipe and it turned out great. Also had fried zucchini patties, grilled chicken with a sesame ginger sauce.

Jasdip, tonight I used a pkg. of Grands Jr. Biscuits and cut them in half. They were ok but I used to buy the small box of Jiffy Biscuit mix and drop by tablespoonful. , they were so light and fluffy. I need to go back to those!

I just made a couple of hot dogs with cincinnati-style chili sauce and shredded cheddar.

rhizo I'd love to see how your cucumber yogurt soup recipe compares with the one that I make.

We grilled kebobs- skinless chicken thighs, mixed summer veggies marinated in a Peruvian chicken sauce. Served over whipped purple potatoes.

Bob, I used Andrew Zimmerman's recipe, without the tarragon (I don't grow it). I made the soup this morning and it was super flavorful by dinnertime.

Mary, I don't like biscuits for dumplings. I like the soft, fluffy, light-as-air ones.

I'll really have to try making it sometime. Of course, hubby likes the biscuit type. LOL.

We had BLT's with cole slaw & macaroni salad. Well my husband had a BLT, I just had a B. I eat mine on plain bread with just bacon-nothing else.
