Will Gutting a House Get Rid of Smoke Smell??

We're looking to buy a real junker of a house right now. While it's only 1400 sq. ft. it's saturated with smoke and pet smells. We can afford to complete gut and replace all the floors, carpets, kitchen, trim, doors, lighting, and bathrooms before moving in. It is also baseboard heated, so no air ducts.

Will this remove the smoke odor? Am I overlooking somethings?

Do we need to replace the subfloor or can we seal it with primer along with the walls?

Do we need to clean the walls before applying primer?

There is also a brick surrounded wood stove. Is the brick too porous to paint over?
