What top coat to use over an oil based stain?

I am refinishing an old oak table. After sanding it down I used oil based stains. Do I need to follow with an oil based polyurethane or can I use a water based?

Also, because of the stain not being white enough, I decided to paint the legs with a latex paint (sherwin Williams for trim and doors). Do I need to strip the stain from the leg I already stained and then sand it to bare wood again, or will light sanding be enough if I use an oil based primer before painting it? I'd greatly appreciate advice.
