Tiling Work - Almost all tiles are chipped

Not sure if this is the right forum for this, but I know the tile in question is often used in bathrooms so it's a similar installation.

I had a wall tiled using 'mare bianco' limestone (also goes by 'escarpment marble', a softer stone) and the tile guy used the 'self-leveling' spacers when he installed the tile. When he ripped out the spacers almost every tile got chipped. He told me it's not possible to install this type of soft tile on a wall without chipping and the only way to install tile on a wall is the self levelling spacers and I'm being way too picky. Any comments? Does anyone have a marble/limestone on a wall without chips?

Thanks! I attached a couple pics (it's a fireplace wall)
