best lemon meringue pie recipe

Mom is hosting my oldest brother's birthday. I suggested she make him his favorite pie. She didn't remember ever making it. My point being, she can't give me her recipe! Oops! Please give me your best suggestions? I'm happy to make it for her, if I just have a direction.

Still no replies? I did a lot of research on "best" lemon pies, and also on meringues, a couple of years ago but can't find my final recipe or any of the results! A number of years ago, I encountered a woman in a grocery store where we were chatting while waiting to be served. She mentioned that she couldn't find the old Joy of Cooking recipe her mom used in the 1960's. I mailed her the three recipes that were in my mom's copy from that era. I made one this spring that was delish. I'm quite certain it was from an e-newsletter I received from King Arthur Flour & described as mile-high lemon pie. A quick search on their site didn't bring it up right away. I'll keep trying to find it.

Virginia...that is a good recipe..good book...the sauce recipe might be good but it calls for too many egg whites. The orange-carrot cookies are good DH likes them but now you have reminded me about the pie recipe I will have to make it this week. I have had my book for more than 30 yrs.

My Sweetheart (Neil) makes the best lemon-meringue pie. He's been making it since he was young. He and his brother kept wanting them and their mom told them to start making them themselves, and whomever made the pie, got half! Long funny stories go along with that. I'm not permitted to make his pie, because that's his claim to fame, although I will say it is VERY similar to ginger st thomas', except he doesn't use food coloring. Heaven forbid I do the meringue. That's a work of art in itself..lol. What I wanted to suggest is his crust. He makes it with a graham cracker crust and not pastry (I am allowed to make that part). At first I thought he was nuts, but I tell you what... once you've had the pie with a graham crust, you'll wonder why you liked it so much with pastry. Give it a try. I think you'll be surprised. It is now expected that we show up with his pie to everyone's home we're invited to. While Neil is thrilled about that (you know how men like to strut), it also keeps him from eating half and having to settle for one piece like everyone else. Poor baby. Great having a guy who loves to cook, too, finally. Let me know what you think! Have a great weekend...

Thanks for the recipe, I just love anything lemon! I don't have a similar recipe but one of my favorites (taste and ease of prep) is Tracey's Lemon Sponge Pie. Since I'm out of pumpkin pie (finally, LOL) I think I need to make something lemon! Posted by TRACEYS (My Page) on Wed, Jul 16, 03 at 9:36 I use my moms pie crust recipe that uses lard but you can use whatever you prefer. If I can make a pie anyone can. LEMON SPONGE PIE 1 9" pie shell unbaked 2 Tablespoons flour 1 Tablespoon melted butter 1 Cup sugar 2 Eggs separated 1/8 Teaspoon salt Zest and juice of 1 lemon 1 Cup milk Beat egg whites until stiff. Combine butter, egg yolks, salt, lemon juice and zest, and sugar then and in flour and beat(I usually just use a whisk). Add milk and mix well. Fold in egg whites and pour into pie shell. Bake 10 minutes at 425 degrees. Turn oven down to 350 degrees and bake for additional 30 minutes.

If you don't care for traditional Libby's pumpkin pie, here's the absolute best alternative, as long as you're willing to add some bourbon. PUMPKIN GELATIN PIE 1 envelope unflavored gelatin 3/4 cup sugar 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg (use fresh grated) 1/4 tsp salt 1/2 cup milk 3 slightly beaten egg yolks 1 -16 oz can pumpkin 1/4 cup bourbon 3 egg whites 2 Tbsp sugar 1 baked 9" pie shell Whipped cream for serving In saucepan combine gelatin and 3/4 cup sugar, cinnamon, nutmeg and salt. Stir in milk, egg yolks and pumpkin. Cook and stir over medium heat til mixture thickens and just begins toboil. Remove from heat; stir in bourbon. Chill mixture until partially set. In small mixing bowl, beat egg whites until soft peaks form (tips curl over). Gradually add 2 Tbsp sugar, beating until stiff peaks form (tips stand straight). Fold egg whites into pumpkin mixture. Pile pumpkin mixture into baked pie shell. Refrigerate several hours until mixture is set. Garnish with whipped cream and sprinkle with fresh grated nutmeg, if desired. Enjoy!

I was thinking that America's Test kitchen might have a great recipe, but I couldn't see theirs without joining, however, google found it on someone's blog. Not sure if it would be as good as amck2's gorgeous pie!

plllog, Thank You. The first link in your post has the recipe for my pie!

I had never used marshmallow Fluff in a meringue but it gave it stability with less weeping. And it wasn't too sweet, which I feared it might be.

I remember it took a lot of lemons, but I love a really lemony filling. This one had a bright citrusy flavor. Not like some lemon pies that taste like bland lemon pudding.

Keep well chilled till right before serving to ensure the filling remains firm.

I have had good luck making a lemon meringue pie from "Fine Cooking" magazine, issue 116. It takes a little time, but the results are worth it and very yummy. Watch the video on the attached link. The recipe is also included
