What kind of bread do you make in your breadmaker? I got a new one for $4. yesterday at Goodwill, and tried a white loaf. Good. Would like to try some other kinds! Thanks

I most always use mine just to mix up the dough. I make more yeast rolls than I do loaves of bread.

My bread machine died a few months ago, but I used to make 50% whole wheat loaves in it. I also made rye and pumpernickel, but the loaves came out a bit misshapen. I also used it for making pizza dough, using the dough cycle, of course. I found a lot of good recipes in Bread Lover's Bread Machine Cookbook, and I still use recipes from that book, even though I no longer have a bread machine. I used it for the whole wheat Challah recipe last week.

What brand of bread machine did you get? Did it have an instruction booklet? If not, you should try to download it.

Here is the recipe I normally use: Eggplant Parmigiana 2 medium eggplants (select ones that are long and somewhat narrow) Kosher salt Flour, for coating 2 eggs 2 tbsp water 1-1/2 cups Panko or dry breadcrumbs 1/4 tsp cayenne Avocado or grape seed oil, for deep frying 1 pound Mozzarella 1/4 pound sharp Provolone 1/4 pound Parmesan cheese Sauce: 1-1/2 cups (12 oz.) Marinara (tomato) sauce 1/4 cup fresh basil, chopped 1 tbsp olive oil 3-4 cloves garlic, minced (optional) Directions: Slice the eggplant into 1/2Ã¢ÂÂ thick rounds and place in a large bowl with a large amount of salt, enough to coat all cut sides. You can toss the slices in the bowl if it has a cover to get the salt more evenly distributed. Then place the slices in a colander or other large pan (such as a steaming basket) with the slices vertical, and allow it to drain for one hour. Remove the slices from the colander and wipe off the excess salt with a brush or towel, and dry the pieces with a clean towel if they are very damp. Note: Do not leave overnight! While the eggplant is draining, add the basil, olive oil, and garlic to the tomato sauce for extra flavor. It is not necessary to cook the sauce at this point. Prepare the mozzarella by cutting it into fairly thin slices, and grate the Provolone and Parmesan. Heat the oil in a deep frying pan to 375ÃÂ° and have a platter ready with paper towels for draining. Place about a cup of flour in a bowl for dipping, and mix the breadcrumbs with the cayenne in another bowl. Blend the eggs with the 2 tbsp water in a third bowl, and place the bowls in a row for coating. Prepare each slice by first lightly coating it with flour (shake off excess flour), dipping in egg, and finally in the breadcrumb mixture. Deep-fry each slice in the oil until lightly golden on both sides (approx. 3 minutes per side) and then drain on paper towels. When all the slices have been fried, get an 8Ã¢ÂÂx13Ã¢ÂÂ (or equivalent) glass or ceramic baking dish and brush olive oil on the bottom and sides to prevent sticking. Spread a very thin layer of marinara sauce in the bottom of the baking dish, and then place a layer of eggplant over that. Put a small amount of tomato sauce over each slice and then a slice of mozzarella over each piece, and sprinkle a bit of Provolone and Parmesan over that layer. Repeat this process until the baking dish is full, but do not overfill. The final layer will be tomato sauce with no cheese. I prefer to have all the cheese between the layers of eggplant, but you can put some on top as well. Cover the pan with a lid or aluminum foil and bake at 375ÃÂ° for 20-25 minutes. Allow to cool for 10 minutes before serving. Pinot Noir or Chiati is good with this dish. I serve it with a side dish of pasta plus bread. OK, so if I wanted to make it without using a bread machine (I don't have one). Tell me if this sounds right. Mix dry ingredients. Pour in yeast and water. Knead for 5 minutes in stand mixer. Put in greased bowl. Let it rise until doubled in size. Punch it down and shape it into a loaf pan. Let it rise until it's crowing over the top of the pan? I have some rye sitting in the freezer that I used for a sourdough starter so I guess I could grind a 1/2 cup of that for rye flour.

I know this is a little late to respond, but I make Rotis all the time. I try to limit the amount of wheat I eat, and using flat breads makes that simpler. I always use whole wheat flour, I find King Arthur the best, because it is finely milled and it makes for a smoother dough. Rule of thumb 1/2 as much liquid as flour. So if I am using 1 cup of flour, I use 1/2 cup water (I often use a tablespoon of whey or even yogurt or kefir - adds a little more flavor to the roti) and salt usually between 1/2 & 1 tsp. The dough is always going to be a little different. If the dough is sticky, I add a little more flour, just enough to make sure it is not sticky. I roll it in a ball and coat it in olive oil then let it rest for at least 15 minutes but usually overnight. (Soaking the dough helps remove the phytic acid, making the nutrients more available. This also makes for a more flavorful roti, as it will sour a little.) I knead the dough briefly to mix in the oil, then roll into little balls, which I flatten and roll in flour until I roll them into disks about 6". The trick with rotis is to make sure your pan is in the right heat zone. Too cool, and the roti will just sit on the pan without puffing, too hot and the roti will burn. I normally use a medium hot...it will be different on every stove. Often my first roti wont puff. If it doesn't puff a little, it will be too dense and a little unpleasant to eat. I just remove it and raise the temp before adding the next roti. Once I have the right temp and the rotis puff before burning, I add the original roti back on. Usually within a few seconds it will puff. I use a spatula to press down on the areas that don't puff, to encourage them to puff. ( I only press down on the cooked side, so not until I have flipped the roti at least 1 time.) I think I generally get about a dozen rotis per cup of flour. I don't usually try seasoning them with anything until they are cooked, because I use them for everything. I have slathered with peanut butter, and sprinkled choco chips and covered with a second roti, back on the grill. I make grilled sandwiches with them, eat scrambled eggs in them, use them for tacos/burritos, heat them, and coat them with cinnamon and sugar, they make great quesadillas, and I even throw them back on the griddle on low heat/or in the oven until they get crispy, and use them for crackers.

I'm BAAAACK! Thanks so much for your many good ideas and links. And, yes, I'm thinking more of a grainy, nutty, seedy bread with _some_ softness and some bits of seed/nut and dried ginger or bits of tart dried fruit, but not too much. I thought that I'd never escape Verizon Customer Service Con-Fusion Hell. Now, a neighbor is caught up in their Rabbit Hole machine. Pray for her. (I mean, put down your spatulas, get on your knees, and really pray.). She told me she'd lost her Internet and TV; I offered that was because Verizon gave them to me. Now it's her turn to speak with Any-Which-Way call centers -- all with conflicting advice and opinions and no one overseeing things or lending cohesion to the proffered "information." For about a week I could only get Internet access via an old "smart" phone and slow 4G. And the phone working memory space is lean. Then (now, still) my arm is sore. I think I lifted something a tad (x25) too heavy. My biceps deltoid hoopalongacepts muscle-tendon whatchamacallit is crazy painful. Even reaching for a cup of coffee, or reaching around behind me (for remote) is painful. And today is already too hot for me (Iceland and Northern California sound great). Back to bread (finger typing with sore arm, so please excuse errors): Some of you suggestions look really good. With my sore arm muscle, I truly might need to resort to a bread machine or Kitchenaid with dough hook. For the past year, I've been experimenting with my "lazy-busy-sore-hand" pizza dough recipe: I pretty much follow the Bob's Red Mill Artisan flour recipe for pizza dough, but make it a bit wetter. Then I let it rise at cool room temperature or fridge temp inside a thinly coated EVOO poly bag. When it rises to ~ double, I stretch/fold over the dough. After about 24-38 hours, I use it for pizza dough. Someday, I hope to learn Ann-T's recipe and technique. However, I want to try and not consume too many simple carbohydrates (the type that quickly raise one's blood glucose). I am a lover of things like pies, pastries, breads and cakes, but I am no longer 18, so must pay attention to what I eat. In another week or so, I will try either using my Kitchenaid with dough hook or the bread machine (ack) to make some multi-grainy, nutty-seedy bread. I will report back on how it goes (but don't want to bore the many accomplished bakers here). April was cold, snow, rain and wet. Then I had paper work to take care of. I never got much of anything planted, and now it's very hot (for me) in interior New England. My body hates heat and humidity and is _not_ supposed to be in this climate. Cornwall would be better ;-) Our garden rhubarb is ready and is even starting to bolt. Maybe I can find a way to make a few rhubarb dishes that won't send my body's blood sugar into sustained hyperdrive. I've not gotten any our our rhubarb for three years -- always some volcano, flash flood, or "other" to grab my time. Maybe I can freeze some and use some for a smart tart (galette) or bars.

What kind of bread machine did you get? See if you can locate the user's manual for it on-line. They usually come with a number of recipes which are especially designed to be used with your machine, and they typically are a good place to start.

Machines will make different sizes of loaves, so if you won't want to make the wrong size loaf in it. Some of the older machines only make a 1# loaf, while most others make a 1-1/2# and/or 2# size loaves.

I'd suggest a copy of "Bread Machines for Dummies" by Glenna Vance and Tom Lacalamita as a good place to start. It's the book I give to students taking my Bread Machine Class. I've never had a recipe fail me from that book, and it has a nice variety of bread choices; along with great bread-making instructions if you are new to bread machines and/or bread-making.

Some machines can't make 100% whole wheat bread, and that type of dough can be tough on some machines. So when we know what kind of machine and it's capacity, that will help with the recipe choices.

It's a Salton Breadman. My regular recipe has a combination of white, wheat, and oatmeal. I'll try that next, probably just thru the dough stage... Thanks so much. I do have the manual, but it only has about 3 recipes in it.

I have a newer Zojirushi, the model with the heating element on top. But I used to have an older Zojirushi & also a Panasonic. Like Marilyn Sue, I use my breadmaker mostly for the kneading. But during the summer (or when I'm exceptionally lazy - which is happening more frequently), I bake in it. In fact, just a few days ago I made the same recipe Lars used for his beautiful challah and baked the loaf in my machine.

My favorite recipe right now is from King Arthur Flour: Harvest Wheat Bread . I use a lot of recipes from King Arthur and from Beth Hensperger's Bread Lovers Bread Machine Cookbook .

Every breadmaker works differently. If you'd like to bake in yours, you might want to try a few smaller basic loaves (so you don't waste too many ingredients) until you get to know it better. Even if the loaves aren't perfect, they can be used for toast, breadcrumbs, croutons, etc.

I only use the dough setting

I make honey wheat or honey oatmeal bread

Also pita bread and pizza dough.

I also have a Zo and lately using it mainly for the dough setting. King Arthur has a lot of bread recipes for machines and also rolls. There potato rolls are excellent my grandson loves them. Also check out Breadmachinediva.com. I have tried many of hers
