That looks tasty. What else is on it besides the herbs?

Rob333, it is tasty and very easy. I make this sort of Thai variation often, but pretty much play it by ear each time, depending on what I have in hand. In the spring and summer, the herbs are usually available. Experiment with what you relish. Usually I include the following ingredients.

-- foundation of pizza or flat bread. I make the f b from scratch. For pizza dough, I sometimes make slow rise/cold rise dough or use a grocery store pizza dough.

-- I have an aluminum pizza pan. I like to put a thin layer of oil, then a thin layer of fine cornmeal down.

-- I usually cook at the mid-bottom area of the oven with the convection fan ON. Temp varies. Maybe ~ 440 to 500 deg F.

Ingredients usually include ex large shrimp, fresh minced garlic, maybe some shrimpy garlicky oil, grated prole Parmesan, a bit of white buffalo like mozzarella (not much) and maybe a bit of some other cheese.

-- Vietnamese or Thai fish sauce -- not too much

I keep an eye on it while in the oven, but perhaps 6-8 minutes ( depends on the thickness of the foundation dough and how much "stuff" I put on it. You'll get a feel for it. I tend to not like any soggy dough, but I don't like a dried out crust either.i like a toasted bottom to the crust/cooked dough foundation.

I usually add some dried red pepper flakes to give it a bit of kick. Not too much. To taste.

When cooked, done, I remove from the hot oven, add the fresh green herbs (Thsi basil, cilantro, fresh spearmint (wash the spearmint to remove any grit or sand). Sometimes I tent it with aluminum foil or partially cover it w a large pan lid. Let it breath so that it doesn't get sogged from steam.

Sometimes, I return it to the warm oven (heat off).

We eat it hot or cold for brunch (narrow sliced sections). It is good at room temp as well.

I'm thinking that I will try baby arugula on the next one.

Use you imagination and whatever flavors you enjoy. Please send feedback and photos!

You can also squeeze a bit of fresh lime juice onto it (avoid the center). Jalapeño would be fun.

Enjoy

I'm in a very different climate than you are (PNW), but here goes: I have a perennial herb garden for culinary herbs that takes up about 6' x 4' - hard to say, because it's an irregular shape. The annual herbs are in the veg garden, and other herbs are scattered around in pots and in other beds. There are non-culinary herbs here and there as well. My "dream" herb garden would include the sort of things I have now, but a little more artfully arranged, and maybe with more of some things - I love basil, and so, this year, I've started it from seed instead of going for a half-dozen nursery plants. I should have a basil-o-rama. In the perennial garden, I have tons of thyme, sage, rosemary, fennel, lovage, chives, oregano, marjoram, and tarragon. (There's comfrey too, because that sucker just wants to be there.) Most of these are there through the entire year; the tarragon does die back. In the veg garden, there's chervil, parsley (could have been in the perennial garden, since it sticks around, but it likes where it lives so I've left it there thus far), cilantro, dill, chervil. Mint is in a pot to keep it contained. Someone once planted lemon balm on this property, and it grows everywhere - it's become a bit of a weed. (A nice-smelling weed that you can use for tea or in salads). The bay is also in a pot, as is the kaffir lime. So is the cardamom, which is really just there for fun, since I doubt I'll be getting pods from the thing. The leaves smell nice :-) More rosemary and more thyme grow in other pots. In other beds - lavender, chamomile. As far as your question re bed design, I'm a fan of raised beds, so that's what I'd choose. My current perennial herb garden is stone, which is pretty, and allows for a non-geometric shape. I like everything to be easily accessible for plucking things to bring in to the kitchen, so I'd choose narrow/small beds. I like things to be aesthetically pleasing, so I'd keep that in mind as I laid out my plants. Have fun!

I've had my mint plant for about a month or two. It thrived when I first had it, grew like crazy. It needed water very often, almost daily. We had some hot days for about a week. I'd water my mint in the morning before I went to work, but by the time I got home from work (I work 10 hour shifts), it would be limp, laying on the windowsill with all the leaves curled under. I had to put the pot in a bowl of water and let it water itself from the bottom; that was the only way I could get enough water into it and not have it looking like it was dead when I got home from work. After watering it like this for about a week, I noticed the roots were growing out of the bottom of the pot about 4 or 5 inches! The roots at the tips were black, which I believe was rot. I cut off the black roots and put in a bigger pot. Is it possible to have too big of a pot with mint? When I originally got the plant, the roots were growing out of the bottom of the small pot, so I repotted it and it was only about 2 weeks later the roots were growing out of the pot again, so I repotted it into a pot 3 times its' size. Was this wrong? I've heard mint is a deep rooter, so I wanted to give the plant plenty of room to grow. Problem is, now a lot of the leaves are turning yellow and withering. Was it wrong to sit the pot in a bowl of water and let it water itself? Could that be what made the roots rot and grow out of the pot? It seemed to be doing well when I had it in the bowl of water, but I wonder because then the roots rotted. Thanks for any help you can give me! Oh, it also seems to thrive in sunshine, but I've heard others say it needs shade. I'm guessing all plants are different? It only gets bright sunshine for a few hours a day, then medium to low light.

Cilantro ? Parsley ? and Thai Basil ?

Seeds will only germinate and become plants if they were mature to start with. Seeds will only mature on a living plant. It's doubtful if a plant grown indoors will have reached maturity before it died, or lived long enough for any seeds to have reached maturity - but there's no harm in trying, is there? Curly parsley, like other parsleys, is a biennial. That means that it lives out its entire life cycle over 2 years. In its second year, it will produce flowers, then seeds, and those seeds take quite some time to reach maturity. No amount of watering will bring a dead plant back to life. Certain deciduous plants can LOOK dead during winter, but there is still life in the roots, and usually in the stems (branches) as well - it shuts down and goes to sleep, and will bounce back in spring - but parsley is not one of these. If parsley looks dead, it is dead. Thoroughly dead. You can grow coriander (cilantro) at any time of the year, provided the conditions provided for it are right. Because it is a very short-lived plant (about 2 weeks in my subtropical part of the world), you'll need to do successive plantings, about every 2-3 weeks. Best to allow it to self-seed (ie drop ripe seeds and go from there without any intervention on your part). Hence - best outside. To again quote a long-departed old gardener friend of mine: "God didn't make houses, and he didn't make pots, either". Which means that most plants do better planted outside in the garden. What a lot of people forget is that (a) plants usually get much bigger and healthier when planted outside; (b) indoor plants are inhibited by the amount of dirt and grease which covers their leaves (c) all plants will be stunted to some degree when planted in pots (and usually the pots will be several sizes too small!); (d)the light coming through glass windows is FILTERED light - filtering out certain rays of the sun which plants need. I suggest you use the search facility here to browse through the many posts on the herbs you mention. eg: Here is a link that might be useful: search results for 'parsley'

well.... right now we have a 40X60 veggie garden but we decided at the beginning of this year to make ONE more move (we have moved 4 times in the past 4 years) ARRRGGGGG!!!! So this spring I made a promise to myself to ONLY plant what I ABSOLUTELY cannot live without ....... since last year I got crazy and planted so much it felt like it took from sun up till sun down just to harvest it all!!! But so far I have 12 5 color swiss chard, 117 toms (8 different verities), 8 snow peas, 8 sugar snap peas, 6 collards, 6 spinach, 47 red onions (just regular bunching but I gave my mom some candy red ones that I got from dixondale this spring to try out), 6 edamime soy beans, 20 broccoli, 5 cauliflower, a package of mixed salad greens and 40 carrot plants (if my luck is anything this year like it was last year with carrots I MIIIIIGHT get half of a finger carrot worth from 40 planted) and 15 red potatoes. AND ITS ONLY SPRING!!!!!!!! I havent even gotten to my summer stuff yet. But I just cant turn down the chance to try something else. I even planted sugar snap peas, dill, sunflowers, arugula and lettuce for my chickens around their fence so they can enjoy some veggies all summer too. Ummmm not like I dont already give them all the cantaloupe and watermelon all summer long that the deer bust open. Spoiled Little Ladies! Hehehe but I just love how they follow me around clucking at me, asking what else i have for them. I would list all of the specific varieties but I dont have them in front of me at the moment. Oh, and thats the veggies..... i just got done making 4 new small beds with orange variegated and yellow cannas in them yesterday, planning on more beds later this week. My mom loves flower gardens and specimen trees so everytime she comes out to my house I feel like a failure that my gardens are bare and dont quite look like hers. Hehehe she felt sorry for me and came over with a very nice bouquet of her gorgeous spring daffodils to display on my kitchen table. She even dug up some tiger lilies for me to plant, I think that was her way of saying I need to add some flowers hahahaha. Ok I think I have officially crossed the line of just rambling so I will stop here! ~Danni Girl

A favorite of ours as well. Using what the garden brings. Snap peas and pea shoots. My arugula, second planting is up, DH likes anchovies and olives.

Have not made mozzarella yet this season. Fresh garden tomatoes are a few weeks away. Herb goat cheese stuffed zucchini flowers are going on mine this weekend. A bit of prosciutto. Hope my basil survived the storms.
