Hmm. That's interesting, I wonder how they would be if some of those Andes mint pieces were mixed in there.....

I almost always add chocolate chips to oatmeal cookies, but I have not tried them with mint, and I love mint and chocolate together. I wonder if fresh mint would work, since I have that, but I do not have mint extract. Can you make mint extract? I would think that if you crush mint leaves and add vodka, it might work.

Lars - I bought a small bottle of pure peppermint extract at Publix. They also have pure almond extract. Both are McCormick products. The peppermint makes the cookies taste like Girl Scout Thin Mints.

May be a dumb question but how did you make the 4sticks of cannabutter

1. Melt 4 sticks of butter in a pot with water.
2. Bring the temperature WAY down.
3. Crush your herb and add it to the water.
4. Simmer at no hotter than 208 degrees and no colder than 195 degrees for 6 hours, stirring every 15 minutes or so. NEVER LET IT BOIL!!!!
5. Strain through cheesecloth into a large Tupperware container.
6. Refrigerate overnight.
7. In the morning, carefully remove the solid butter from the top and discard the water.

If you've made the cannabutter, why do you need the extra extract?

Not sure what one has to do with the other, but the peppermint is strictly for flavor.
