Replacing 50-gallon electric hot water heater - need more hot water!

We are replacing our 50 gallon electric hot water heater. With the new regs that went into effect last month, 55+ gallon electric HWHs are things of the past. We don't get enough hot water with the current 50 gallon electric HWH. What to do? Install two 50 gallon electric HWHs? I'm concerned that they will cost a small fortune to operate. Converting to gas isn't an option for us because of structural issues. Also, our current HWH isn't in a well-ventilated space (downstairs on concrete slab in enclosed space with one door), so I guess a heat pump hot water heater won't be an option? Please help!
