Cutting down island w/ cooktop to counter-height - safety concerns?

Currently, we have an electric cooktop in the kitchen island, that is backed by a pony wall and a raised, bar-height counter on the other side. We cannot move the location of the cooktop. I want to replace the electric cooktop with an induction cooktop, add a telescoping vent, cut down the pony wall and make the island all one counter-height surface.

Will it be dangerous for my kids to sit at the counter behind the cooktop? Currently, the chairs are 17 inches away from the back of the cooktop (and raised up higher), but we can extend the counter to have at least 24-30 inches of space separating the two. Is that sufficient, particularly if I can raise the telescoping vent when cooking? Will it look weird to have the pony wall remain on the backside of the island cabinets, even though it will be largely hidden under the bar counter? If so, is there an alternative? I'd appreciate any insights while we think this through.
