My vote goes to chewy chocolate meringues:

They are even parve (have no dairy or meat ingredients) if made with parve chocolate chips. It's an unusual meringue recipe - the whites aren't beaten, just mixed into the other ingredients.

P.S. Since Passover powdered sugar is hard to find, we made it by whizzing sugar in the food processor with a tsp of potato starch. Powdered sugar is lighter than granulated, about 4 oz per cup instead of 7 so the 3 cups called for would be about 1 and 3/4 cups of granulated sugar if measuring by volume.
