Italian Cypress trees or something else?

I've been mulling this over for a while now, and I'm still not getting anywhere...but I'd like that to change! I want to put something in along the fence [actually, a brick wall] at the back of my backyard. I want something that looks like Italian Cypress, so I can grow a row of them, planted densely so there's little to no space between them when mature, have them grow tall enough to be taller than the wall [which is 6' where the trees will go], and then stop getting taller. So, something in the 8-12' tall range would be about it. The Italian Cypress trees I've seen online say they can grow to 50' tall. That's WAY TOO tall! What kind of tree can I buy that will give the columnar look I want, but whose height won't reach massive proportions?
